Status Update

I promise I haven't forgotten y'all. After my time doing so well this summer, I completely fell off the wagon. I'm *still* off the wagon, and feeling like crap. However, we're broke right now, and without a crystal clear plan to get un-broke, so we're eating lots of potatoes, rice, ground beef, chicken (I at least got thighs!) and noodles. I still don't tolerate many eggs, so I can't just go with that cheap staple of LC.

Hubby has asked that I try something crazy and new, like exercising and seeing if that helps my energy and feeling like crap before trying to go back to low carb. He also makes the point that if I do have more energy, I'll be better able to stick to low carb. For now, that's the current plan, starting tomorrow.

For food, I'm cooking large amounts of mashed potatoes, ground beef, and caramelized onions at once. That way, all I have to do is throw beef & onions into a pan & make gravy, sloppy Joe, etc. Veggies are generally frozen, salad, or wrapped around my burger. I do have 2 portabello mushrooms I plan to turn into mini-pizzas for me. I figure this is my grand opportunity to cut back on Dr. Pepper, as it has crept up again, rather than trying to do all things at once.

TL;DR: Life fun, trying exercise & cutting back sugar, will get back to low carb when finances allow.

    Why not just skip the potatoes/noodles and eat more veggies? are they too costly where you live? cauliflower/broccoli/cukes are usually cheap..and filling. Food banks always want you to take more veggies anyway.

    I know potatoes are $5.-$8 for 20 lbs..and Cauli $2-$3. for a 3lb head, rice is $1.+ a pound, carrots are cheap.

    I LOVE rice, and it would be the one thing I added back if I could tolerate more carbs.

    and I DO understand being broke. (in my early 20's hubby and I lived on mac n' cheese (20 cents a box back then) for a few months, and even used water, vs milk, it was bad!!…Like Scarlett O'Hara, I promised I'd never eat that way again.

    At least you are aware of what you are juggling, and aspire to return to LC, rather than give up.

    Whether I tolerate veggies varies by the day. We have frozen broccoli and I plan to get more frozen cauliflower next week. I haven't figured out how to make it more filling by adding enough fat, and I'm almost out of butter, so I'm using it sparingly.

    I'm going to go ahead and see if I can't figure out how to finagle a LC menu, at least for me, next week on a budget and without trying to cook 2 meals every evening. Wish me luck!

    Are cabbages cheap where you are. I am in South Africa and can get gigantic cabbages for about R10-R12 (less than a dollar and usually does about 4 meals) I then shred it and stir fry it with a bit of butter leaving it with a little bit of a bite (no soggy yellow cabbage bleurgh) and use it in place of pasta covered in whichever low carb sauce I feel like. My kids and husband who are not doing low carb also love it although I will do pasta for them occasionally and it isn't like cooking a whole different meal. My Mother in Law lives with us and we have just begun a veggie garden together (she is retired so can look after it while we are at work.) It was pretty cheap to get started and I am looking forward to picking Cauliflowers, Brocolli, Spinach, lettuce, pumpkins, cabbages, tomatoes and cucumbers as soon as they all grow. Can't get more low budget than that. Plus the digging over of the ground was fantastic exercise.

    I need to try cabbage. Trying new vegetation is scary to me, as I never know when something is going to cause my system to argue. Then again, if I'd remember to take my digestive enzymes, it might not hit as hard.

    As for progress...well, we've all been hit with the respiratory crud. I'm taking my time sitting here doing nothing to go through my low carb cookbooks and plot.
  • Exercise burns carbs off you eat

    Do that exercise to make those carbs go away

    It will definitely help
