I'm doing my weekly prep. It's the only way I can stay on track, but it's a chore!
Prepping:
2 kinds of cabbage rolls for the crockpot (cheeseburger & chicken enchilada flavors)
Chopping lettuce & veggies
Hard boiling eggs (actually trying a new Pinterest idea & baking them)
Making a big batch of chili for dinner, & leftover lunches
Making a fresh batch of ranch
I'm sure I'm forgetting something. Do you all find it easier if you prep ahead? Any ideas?

your very ambitious, even if it is one day. I need to do this too. I buy at Costco, so I should cook like you do so I don't waste anything! Way to GO!0

I'm sure if I worked a job I would have to plan for the week. I will be before too long so I love hearing ideas to make life easier. Plus, I'd love to know how those eggs do in the oven.0

I try to do some Sunday prep also. Today I made some coconut raspberry muffins for my husband's breakfast, steak and green beans for my husband's lunches, and an egg roll in a bowl recipe for my lunch a couple of days!0

If anything, I think I am way more freestyle these days when it comes to cooking. Although I was never one to prep vegetables ahead of time, Sunday used to be my day to make bone broth all day, then either bake something or make a roast or some sort of big meal that would generate leftovers. These days I'll still make the roast on a Sunday, but I don't plan what I'm going to eat throughout the week. Every couple of days or so, I'll cook something else and we just alternate the leftovers depending on what we want to eat. My kids are in their early 20's though, so it is easy for all of us to just grab something quickly. One of my daughters will usually cook up Brussels sprouts with bacon or sauteed cabbage or spinach, so we always have leftover veggies and meat in the fridge
Today I'm making tomato sauce from the last of my garden tomatoes. I will cook 2 pounds ground beef and 1 pound ground pork, and bake a spaghetti squash from the garden. I find that as I do this longer, I plan my meals less. I have little stress surrounding meals. I eat one meal per day though, so that makes it even easier.0
