Happy Thanksgiving

Happy Thanksgiving to my fellow Canadians! Hope you are having a nice long weekend.
Lately I have been getting a bit stressed and busy with hosting the dinner, planning a Halloween party for 300 for the school that facilitates our homeschooling, planning for 5 family birthdays that happen within 4 weeks of each other, and then looking ahead to Xmas on an unemplyed budget... I have been tempted to go off plan.
BUT! I plan to enjoy my thanksgiving dinner and stay on plan. I may eat more than my normal calories, or double or triple it, but I'll stay low carb. I'll eat small servings of the carbs, skip the cranberry sauce and pumpkin pie, and eat some fat bomb treats and whipped cream. Mmm.
So far I have found that staying on plan helps control this season's stress over the long term, even if I want a soda or cookie at that moment. Substituting in LCHF treats is working. yay!
Anyways...
Happy Turkey Day on Monday!

If you decide you have some extra time and need something pumpkin flavored, may I make a suggestion?
http://mariamindbodyhealth.com/pumpkin-swirl-cheesecake/ - You only need about 1/3 of the crust, and I didn't bother messing with the swirl, just mixed it all up. I made it in little tiny mason jars & an 8x8 pan.0 -

Oooh, That looks really nice. Maybe I'll look into something like that. I'll just have to alter the crust a bit for the nut allergy in my house....
Thank you!

Happy Thanksgiving! Good thing you mentioned the cranberries. I make my own sauce with xylitol instead of sugar, better make some today!0

@Twibbly OMG! I just made the pumpkin cheese cake/squares. It's in oven right now. I tried the batter. Mmmmmm! So good.
I modified it by doubling the spices and eggs since I decided to go crustless. Hopefully it will turn out wonderfully. It sure smells good.....
I can see this being a problem for me. LOL I need to figure out the macros and calories so I know how much I can eat!0 -
My daughter made us a crust less sugarless pumpkin pie for tomorrow. We'll have it with whipped cream.0

Happy thanksgiving to you too! I hosted a 3 day celebration at my house. I did well Friday and Saturday but gave myself some leeway to enjoy typical T-giving foods today. I'm back at it strict tomorrow.0

Happy Thanksgiving! Sounds like you have a solid plan. I had no idea Canada's Thanksgiving was at a different time from the one in the U.S.
I'm grateful for you and all the kind, friendly and knowledgeable folks in the LCD forum!0 -
I think we have thanksgiving earlier because we're in winter by time your thanksgiving rolls around. LOL
It has been unseasonably warm here. It hasn't even snowed yet! Oh wait, I take that back. It snowed in August. LOL

We had hail the size of marbles in August. It really beat up the apple crops this year. We went apple picking yesterday (like we do every Tgiving Sunday) and the trees were practically bare.0

Nasty. Do you get much hail there? I forget where you are located.
Calgary (Alberta) tends to get a fair bit of hail. They seed all the storm clouds now.0 -

I froze some of mine, but still ate them in less than week. They do tolerate freezing just fine, thaw in the fridge.0 -
I have an apple tree [in Canada] - very strange - it made the most apples in 30 years and the biggest, but still not edible unless you are a racoon. I keep loading up garbage bins to move them to compost.4031isaiah wrote: »We had hail the size of marbles in August. It really beat up the apple crops this year. Lol. I have an apple tree in the front. It made an apple once about 4 years ago.
The ornamental apple tree makes a tonne of those awful inedible apples that even the birds won't eat. Bah.0 -

It turned out really good crustless. I just added more eggs so it would set well. Yummy! I think it worked out to about 6g carbs without the crust.... So I had three pieces. Oops. I am a little uncomfortably full still.LOL0 -

I bet it is beautiful there right now! I would love to go out east one autumn to see the colours. Out here, it is all yellow, browns with a smattering of reds tossed in.
Well, I am still full from Turkey day.Today is Leftovers Day. Almost as much fun.

Leftover day is always better imho... you can enjoy the same good food without all the exhaustion! I'm feeling very thankful that SO left for work out of town today and happily brought all the carb-leftovers with him (I can ignore potatoes but not the stuffing!), leaving me with just veggies and meat. I enjoyed my cheats immensely, but time to get back on track!0

Ditto! We still have a small bit of pumpkin pie and sweet potatoes left but I can pass on both. Time to get back on track before Christmas.0
