Have not been eating desserts since I started low carb but all of a sudden got a hankering for something sweet.
I found a dessert that works for me. I whipped a quart of heavy whipping cream with a little Splenda, dropped 1/2 cup scoops of it on wax paper and froze, then when frozen peeled the scoops and put them in a ziplock in the freezer.
I made strawberry sugar free Jello and topped it with one of the whipped cream scoops that had been taken out of the freezer 10 minutes prior and just started to soften.
The frozen scoops should be good for a couple weeks, so next dessert jello serving will be easier.
