I had friends over last night for dinner. I was able to share an evening of Low Carb yumminess and no one even noticed the low carb status. My female friend will eat anything, but her husband is an old-school comfort food type (and picky eater) so I was a little nervous! Results - He took seconds of everything! I'll share the menu below. But would also be curious to hear if anyone has any menus that they've served while entertaining? I need ideas for next time please

Appetizers: olives, pickles, hard salami, cheese, hummus, veggies.

Dinner:
Thai beef stew (stew meat in coconut based sauce with spices).
Asian broccoli slaw (almond butter, rice vinegar, peanut flour, peanut oil)
Thai cucumbers (sliced with red onion, peanut oil, rice vinegar & chili paste)

I skipped dessert because I knew we would be stuffed - and we were!

    We went over to a friend's house last night to celebrate Día de los Muertos, so she served several Mexican dishes. Mexican food isn't famous for being low-carb.

    But she had fajitas with salsa and guac on the side. Perfect. :)

    Is that the recipe from againstallgrain.com? It's on my meal plan for Wednesday. How was it?

    It is! It was good, but next time I'll skip the tomato paste & add lemongrass. I think it's good to appeal to the masses & then we can customize later. And I didn't add the carrot & broccoli to the crock pot. I served them as a slaw on the side instead. So my crock was meat only.

    Did you put the jicama in the crockpot or was that on the side too? I'm going to definitely try it as written and see what we can change next time. :)

    Our grocery didn't have jicama, so I skipped it all together.
