Instead of rice?

I'm going to make chicken curry, I have been used to serving it on top of rice. What are some low carb ideas to replace the rice?

    Grated cauliflower. Google how to make it. You'll need to grate it before you cook it. I used that in place of rice in a cheesy chicken rice hotdish my boyfriend wanted me to make and I know I couldn't tell that it wasn't rice once it was mixed in with all the other flavors.

    Riced or noodled vegetables LINK TO IDEAS, spaghetti squash, cauliflower rice, mashed cauliflower, sauteed cabbage "noodles," or sauteed broccoli slaw.

    Or just nix the "bed" altogether and eat the good stuff. :)

    Thank you. I'm going to try the cauliflower idea, it sounds intriguing.
    Dragonwolf, I buy a curry powder that is very hot but has a lot of different spices/flavors too. The 'bed' helps soak up and lend substance to the flavorful sauce which is every bit as yummy as the chicken (or beef).
    BTW, the same curry flavoring can be used in saag paneer which is delicious and low carb as well.

    I like to put food I used to put over rice, over vegies like chopped salads, or steamed broccoli. I think it tastes better now, although it took some getting used to. I like no sugar tomato sauce over broccoli for example. I also like foods like grilled chicken or salmon that I used to eat over rice over chopped salads, or over fresh low carb vegies eggplan ratatouille.

    Cauliflower just roasted also works, and it's less of a clean-up.

    I've never roasted cauliflower, do you cut it into pieces and just roast, or how?

    Cut into 2" chunks, toss w/ oil, salt & pepper...roast on a baking sheet in a 425f oven for 20-25 min

    You can add seasonings as you like. I like to toss the roasted cauli w/ browned butter & chopped rosemary.

    I use grated cauli as well for rice substitute. It takes on different seasonings very well.

    I've posted this pic a couple times here, but I make a spicy cajun cauli "rice" with blackened fish that is delicious:

    You can also try Miracle Rice. Works just as well as riced cauliflower. Has less carbs than cauliflower but the cauliflower probably tastes better. [shrug] When I'm making a dish that calls for rice, I usually use Miracle Rice.

    It sounds odd, but we had a very spicy chicken dish that called for hard boiled eggs to be added just before plating. The flavor of the sauce on the chicken was amazing but VERY spicy. The eggs really balanced that spice out well, almost exactly the way rice buffers spicy food. And at 1 animal-based carb per egg, it's a total low carb win. Even my husband, who won't even stand in the same room when I eat my hard boiled eggs for breakfast, agreed it paired perfectly.
