What to have with baked Brie wheel?

Hello LC friends!

So my husband has never had the pleasure of eating a baked Brie wheel (gasp!)- so I said I would bake a small wheel in the near future and possibly add some toppings like roasted garlic, roasted peppers or toasted pistachios (oh my!).

My dilemma is what do I serve with it that's low carb, or preferably, keto-ish? Crackers are out of the question and he doesn't like pork rinds so what would you serve to scoop up that heavenly baked goodness that is Brie?

    Maybe celery??? Idk. I have had Brie only a few times. Don't even remember what it tastes like. Lol

    I like broccoli, cucumber slices or celery for cheese dips - they can hold a lot of cheese.... more than a flimsy cracker ever could. :);)

    I have no problem taking some baked nuts & Brie on a spoon and eating it. No need to put it on something!

    ETA We usually leave out the chives. They're awesome.

    I sometimes make cheesy almond meal crackers, just almond meal and finely grated cheese with an egg and some spices made into a dough, then roll out between parchment paper, place onto a baking sheet, remove top layer of parchment, cut into cracker sized pieces with a pizza cutter, then bake. Let cool 30 min before you separate the crackers.

    Cheesy Almond Crackers

    1.25 c almond meal
    1/8 tsp sea salt ( I use Herbamare)
    1/4 tsp baking soda
    1 c old cheddar or any hard cheese
    1.5 Tbsp oil...olive or grapeseed
    1 large egg
    Herbs and spices to taste

    Bake at 350 for 15 min, depending on how crispy you want them
