I Found the Secret to those LC PB Cookies!

Many of you have made these the normal way (not with the cocoa option this link refers to). I discovered the secret to making them amazing!!! It's almond extract. Totally changes the taste. And here's how I made them, (divide dough into twelve balls before mashing them so you make sure your proportions are right, also helps keep them from crumbling to keep them small).
Mix one egg, one cup no sugar PB, one scant cup granulated Splenda, 1/2 tsp vanilla and 1/2 tsp almond extract. Divide into balls on a foil lined sheet, smash to thin (they will not spread when baking so what shape they are before baking will remain constant), and bake at 350 in a preheated oven for approx. 12 minutes.
I count roughly six carbs a cookie, or under five net carbs per cookie (tho the recipe claims 3.3 carbs a cookie).

Hmm, interesting. I'm not a huge PB fan. I do like PB and PB cookies from time to time but I'm really picky when it comes to the cookies. So far I haven't found a low-carb PB cookie recipe that I liked. I think I just might try this one. Thanks for sharing!0

Any nut butter works. Sunflower butter with a touch of coconut extract can, in my oldest daughter's words, "Bring you to Jesus."
I make these for hubby's office all the time and they adore them. No one believes they're LC.0 -
The almond gives it that bakery flavor. I can't describe it. Really good tho.0
