Those that can't eat a lot of carbs/diary, what do you do?

Hello everyone! I was reading over my "Complete Guide To Running" book by Runner's World and was looking over the nutrition portion and am concerned about the diary and carb diet. I have a medical issue where I shouldn't eat diary and need to have a low carb diet. If I eat diary the hormones from the diary interact with my hormones and cause my body to not function properly. The problem with carbs is my body can't digest them properly and it causes more hormonal issues and weight gain.
So my question is, what do I do if I can't eat diary/high carbs? Is this going to impact my training/recovery significantly? Any advice is appreciated!

The main reason behind carbs is that it provides the body an efficient fuel to make ATP. Glycolysis paired up with the aerobic system (Krebs Cycle and ETC) is a very efficient method for the body to give you the energy you need while working out, especially if it is at a high intensity. The body stores a pretty decent amount of carbs in the form of glycogen in your muscle cells as well as your liver.
With that said, your body does have a way to use fatty acids from your stored fat and the healthy fat that you eat into energy (ATP) but it requires you working out an an aerobic intensity. Also, the body has a way to make glycogen from non carbs (gluconeogenesis) for those that are on a low carb diet.
My only concern would be certain micronutrients (vitimins/minerals/antioxydants/electrolytes) that come from food sources that are traditionally carbs (whole grains/vegatables/fruits) as well as fiber which is also found mostly in carb food sources.
Dairy is mostly fats and proteins. You should be able to substitute dairy with other fat/protein sources.

Hubby does HFLC, and ran a marathon eating that way. We both are runners, do no dairy d/t lactose intolerance. I can't go into the science of it like above, but it is able to be done, and done well. He used Lara bars (cashew cookie) for nutrition during long runs because they are low on carbs.0
