Omelet Muffin

1/2 tsp ground black pepper
1 container, Egg Beaters Southwestern Style (~13.5 oz)
1 ounce Pepperoncini, chopped
1/4 cup fresh chives, chopped
1/4 cup fresh basil, chopped
1/4 cup fresh green onion, chopped
2 cups non-fat cottage cheese
7 whole eggs
Mix all ingredients in a bowl and pour into a non-stick muffin pan - the recipe should yield at least 7 large-sized muffins. Bake at 350 degrees for 25-30 minutes, start checking for doneness after 20 minutes. Each muffin (based on 7 equal portions) is about 150 calories and 20g of protein.
These are very easy and convenient to make ahead, freeze and re-heat in the microwave.
