Edamame spaghetti!

Has anyone tried these?
I just picked these up at Costco. I know that 10 net carbs might be too high for some on here but I'm excited to try them anyway! Plus 24g protein!

11g of fiber so 21g total carbs like it states on the front

The only ingredients are edamame and salt!

We have those. Tasty. My only complaint is they are very skinny and very short.

Yep I had the ones shaped like fettucine though. They were edamame and mung beans. I thought they were very good
  • So I gave them a try tonight and they were so good!
I served them with cheese stuffed sausage balls and marinara sauce. Soooooo yummy!!!!!

I am so jealous of the stuff you guys can get. In NZ it is super expensive to get anything outside the ordinary. Guess at least we have awesome meat and dairy!

    Wow! Thanks for sharing @natalialikescookies
They're available to buy on Amazon in the UK and from a few online health food stores! That will make a nice treat when I go back up to 35 net carbs, trying to stay under 20 for now.

I hate that it seems like some of the best alternatives are soy-based, which I have to avoid due to my PCOS and hormone issues. Soy causes me some massive gastro-distress, too, so it's more motivating to avoid it.

I have the same brand but they are black bean. So yummy! They fit in my low carb diet well but would be harder on keto. I am gluten free doe to migraines so I was so happy to find them. They are the tastiest option I think.

    A 50gm(dry) serving is 160cal, 15gm carb, 11gm fibre, and 23gm protein.

I discovered that I had a package of this same brand of black bean noodles already in my cupboard, so made spaghetti tonight. I did look at all varieties at my local Bulk Barn yesterday and found the black bean variety to be lowest in carbs. But since I am leary of tummy trouble with higher carbs and beans in general, I ate less than half a serving of noodles. Here's a pic. If you look closely you might be able to detect a piece of a noodle in there. The meat is the main attraction. I might buy them again but really limit using them at all. j2furo6oi73n.jpeg
Or the next time I make spaghetti it might just be a bowl of meat I eat.

If you can find the soybean ones (and you are okay with organic soy) they have the lowest carb to protein ratio. Adzuki bean pasta is awesome but quite a bit higher in carbs (though nowhere near regular or other GF pastas). My fave so far is the black bean because it reminds me a bit of squid ink pasta - just the way it looks. Tastes good too.
