Hi there,
Thanks for all the information and posts. It has helped these two weeks be successful.
I am 8 pounds down and I notice it in how my clothes fit. Since I was at the point of all my clothes being too tight, I have not gone down a size officially. However, I was probably in the next size up but I refused to get clothes in that size. Now my clothes fit. :-) I work from home, so I wasn't forced to get good fitting clothes.
I have more energy than when I started and am hoping that the keto adaptation will be soon. I want to start working out, but I won't add it until I get through an entire day without the 'flu'.
I also find that my moods are better.
A friend of mine has a daughter with epilepsy and has her on the keto diet. It is working wonderfully for her and has her off all those medicines. She gave me a link to 'miracle noodles' and I will be ordering some to try it out. http://www.miraclenoodle.com/p-3-miracle-rice.aspx
Anyone try them? As sad as it sounds, I know those are 'for real' low carb because if her daughter ate them and they weren't, she would have a seizure.

Congrats! It sounds like you are doing really well!
That keto flu may be low electrolytes. Try upping sodium to 3000-5000mg per day with broth, salted food r even a tsp of salt in water. It seems extreme but it really does help. Increased potassium and magnesium can help too.
I haven't tried the noodles but they sound neat. I usually skip noodles or use spaghetti squash instead.0 -

I've not used the noodles, but know several people who have. Some like them, others don't. One said they can be a bit fishy or seaweedy tasting. Give them a try to see what you think and let us know!0 -
They sound scary. I read some reviews that described in detail that the come out just like they go in, so... I'd say chew well! Apparently they are indigestible so that's why they are low carb. They just act as a vehicle for the sauce. You could just eat the sauce. They might fill you up tho.0

I agree on adding salt, potassium, and magnesium. They will kick the keto flu.
I haven't tried the miracle noodles but I have tried shirataki noodles. They aren't bad if you rinse them well, however the texture was a bit off putting for me.

Don't you have to have a special kitchen tool for the zoodles? I was thinking of getting one closer to the summer and use my parent's over abundance of fresh zucchini for them.0

I'm hearing Zoodles all over the place. Never heard of them before this board. I just googled it and now have to figure out how to make them. I love fried zucchini, but a way to make them into noodles would be great!0 -

You can also do spaghetti squash. They're naturally "noodly" once you pull the meat out of the shell. Just steam, roast, or even microwave them until the meat of the squash is tender, then scrap them out and you have a good replacement for spaghetti or even shredded potatoes in those kinds of dishes.0

If you're getting those symptoms then you're still low on electrolytes. Since you're low enough to have symptoms, you've probably dropped some magnesium and potassium too. Get all of those supplemented and really, really make it a priority to keep sodium up over 3000mg minimum or however much it takes to get rid of symptoms and then maintain that minimum amount and you won't have anymore of the "flu".0

My husband and I use those noodles all the time they are great. You just follow the instructions on the package and then cook them in whatever soup or sauce you are going to use for about an hr and they take on the same flavor as what you're cooking them in. They really do fill you up too.0

Miracle Noodles are my go to for pasta so I love 'em. I actually just made up a recipe of Healthified "Tapioca" Pudding last night. The recipe called for 1 bag of Miracle Rice (which is just miracle noodles cut into small rice-sized pieces) and it simulates the texture of tapioca pudding exactly. I made this recipe up for my mom who absolutely adores Tapioca pudding. After she tried one today, she called me and told me it was best tapioca pudding she'd ever tasted and the only problem was that I did not make enough of it so the next time I make it I have to make up a HUGE batch! lol I will be trying some of it this week-end. If you use Miracle Noodles, do NOT follow the directions on the back of the package.
Here is the proper way to prepare Miracle noodles:
(1) Open the bag.
(2) DO NOT SMELL THE NOODLES!! You will be tempted. Trust me. Don't do it. You will regret it! (They naturally ferment inside the bag!)
(3) Dump the noodles into a fine mesh colander and immediately rinse well with water.
(4) Place noodles, still in colander, onto a few of sheets of paper towels and let drain. Replace paper towels as needed.
(5) Put noddles into microwave safe bowl, and nuke on high for 2 minutes.
(6) Put noodles back into colander, and return to dry paper towel stack to continue draining.
(7) Steps 4-6 should be repeated twice for best results.
(8) Add noodles into whatever you are cooking and/or top with pasta sauce.
(9) Enjoy!
Whole Foods sometimes carries Miracle Noodles / Miracle Rice but you can also order it online from Amazon.com and Netrition.com. The Miracle Rice can be especially hard to find locally at times. I'm going to be trying out some Asian dishes using the miracle rice: shrimp fried rice...yum! Do NOT expect these noodles to taste like regular pasta because they don't. They have very little flavor by themselves and are a little chewy as compared to traditional pasta; however, the upside to that is that they take on the flavor of whatever ingredients you cook them with or whatever sauce you top them with. I tried Kelp Noodles once just to try them. One word of advice: DON'T! The Kelp Noodles were terrible...so never again! If you do try them, keep an open mind and I hope you enjoy them.0 -

Oh, by the way, miracle noodles and shirataki noodles are the same thing. "Miracle Noodles" is just one of several brands available. My favorite brand is actually "Zero Noodles" because they seem to retain less moisture and dry out faster than the "Miracle Noodle" brand.

I love shiritake noodles and kelp noodles, but use them in different ways. I am a long time kelp noodle eater, but they are so expensive that I now use the shiritake noodles in the Asian section of my grocery store, much cheaper to buy. They are 1/4 of the price of Miracle noodles. But I don't use the microwave, use the stovetop. You can pan fry them in fat or add them to broth or sauce, yum.0
