low carb friendly cake

My birthday is coming up this weekend and my oldest son is pretty adamant that we do cake. I suggested that I make a cake and they can eat it for me (cake really doesn't even sound appealing in the least and I am not excited nor do I feel tempted) but he wants to make it and said maybe we could find something I could eat...still not excited about the idea of cake, I have a feeling it wouldn't settle all that well.
So, any work arounds here? I don't like stevia at all, or sweet and low, truvia, etc. I think I'd rather skip it all, but this is going to play into teenager butthurt. Would a low carb cheesecake be weird for a birthday? I used to make a decadent zucchini and dark chocolate cake, but it used regular white flour and sugar in it. I haven't found any fake sugar that even tastes remotely nice to me, they all leave a gross after-taste.
I tried to explain that I'll be 31 and don't really care about my birthday, just for them to not fight and keep the house tidy and I'm happy. His response "I'd rather get you something, that sounds too hard." Lol, kids.

What about a keto ice cream, cake? Interest has awesome ideas on making keto ice cream, why not make enough to fill a pie dish, or just a cake pan? Teenager is happy, and you get to remain on plan, yet be included with the family too!0

I made a cheesecake for my birthday last June. It was great. The fam even liked it.0

I found one on Pinterest. Baking chocolate, coconut oil, and eggs. I can find the correct ratios. I cut it into 12(large) slices and it came to 22gm carbs, 34 fat, 7 protein, and about 380 cal I think. It was dense but still fluffy, almost like a cross between cheesecake and brownies. I will check and edit this post.

Have you tried swerve, xylitol or Just Like Sugar yet? Also, can you ketofy your dark chocolate zucchini cake? Sounds like a possibility to me.0

Mine's in 3 days, so I guess I'll make one of those yummy items! Also, Denny's gives you a free birthday dinner - guess you could have it carb free and ask for no hash browns... (but doubt I'll be able to pass those up!)
