Fermented foods

My apologies if there is already a thread about this, but I'll be darned it I could find it.
Anyway- I know that fermented foods are good for your gut flora; my question is, what constitutes a "fermented" food. I eat pickled things- is this the same?? All of my online research talks about Sauerkraut, Kinchi, Kombucha, but there is no mention of pickled items.
Any thoughts?

    Pickled items only if they are naturally pickled. Like jars filled with salt and herbs - or whey, salt, and herbs, etc. If It has vinegar, it is not fermented.

    I think there's a temperature thing as well ... like if it's heated past a certain point it kills the good bacteria ... so you want "raw" stuff.

    Wierd, I thought vinegar was an indication of fermentation. Guess I need to research further!
