I've heard that it doesn't matter how many veggie carbs you eat. Cuz stuff like mushrooms, tomatoes, green leafy vegetables, onions, etc are "FREE Carbs" and have NO insulin response.
Really? There is some degree of insulin response to absolutely everything we eat. It's called science, people!

In real life I always think it's funny that people I see eating all starch based products suddenly worry about vegetable intake when you mention low carb. They had a pop tart for breakfast and a microwave pasta meal for lunch but they are telling me a diet without fruits and low on vegetables can't be healthy! hahaha. I can only assume they eat giant bowls of fruits and veggies at home because I never see a sign of one at the office.0

I tend to eat veggies only one meal a day, which is lunch, so I don't get comments about them, but I've gotten into legitimate fights with people about the health benefits of fruits. They're called nature's candy for a reason, folks.0

I wish I could eat all the tomatoes and onions I want!!!! I'd be in heaven. But I have to stick a needle in myself if I wanted a treat like that.0

I couldn't agree more. I like to have a salad or a side of veggies 1x per day. I found that doing so 2x per day, even as simple as having 2 portions of mushrooms, pushed my carb limit to the max.0 -
I went back to carnivore eating again a couple of weeks ago. I've had no veggies, until last night. I had a green salad with boiled chicken last night (was fed at a friend's home), and this morning the bathroom time wasn't fun!
I feel best when at what's considered to be zero carb!0 -

I feel better under 20. There are days that I go over that, and I just don't feel as energized or "well".

@Sunny_Bunny_, no she's not. She had made chicken tetrazini for the other ladies, and had saved me some chicken (was a sweet thought), they also had huge pieces of a multi layered chocolate cake with chocolate ginoche (sp?) And mousse, and had chocolate covered strawberries. I sat and watched them eat that with a sick to my stomach feeling over how rich it looked. I love having no desire! She did offer me a strawberry, but she knew I wouldn't eat it. These are my sorority sisters. We meet twice a month, and the hostess provides the meal (has been interesting!), but they are more understanding, and supportive than my extended family. There are eight of us, three have type 2, and are morbidly obese, me and another (the hostess last night) have had weight loss surgery (she's regaining right now, but is the only one who has tried this woe, and liked it), another has been looking into weight loss surgery recently, and also suffers from chronic pain, another who is obese, but yet to be diagnosed with type 2, and one who would likely have an almost normal BMI! They sat there making comments about how they had been good that day, so they didn't feel bad about eating it all! I sat there ill, and just smiled!
I do eat moderate amounts of cheese @Panda_Poptarts! I can't imagine a world without some cheese!0 -
@Karlottap congratulations! I imagine super difficult to watch your friends choose foods that are making them sick and to be able to make your own healthier choices. Really impressed. You are like a recovering alcoholic who can go to a party where all their best mates are drinking and still choose not to drink. Wow. You have my admiration!0

I love that I don't ever think things like "I've been good today". I had to work on changing my mindset, I know you're the same way on this. That there are things that are food and then there are other things people also choose to eat... But I don't see them as food and I don't want to eat them anymore than I want to eat my napkin.0

@SamandaIndia, the difference in the amount of pain that a food like that makes me not have any desire for it! I wish everyone were able to have this degree of motivation to make them able to do the same! Thank you!

There is no free carb for me (well, I don't pay much attention to trivial amounts of animal carbs). Any amount of carbs, even fiber, will cause me problems. I also have no qualms about stating that directly when people ask. People will think whatever they need to in order to justify their eating.0
