Since this dough isn't sweetened, I could see it having multiple uses. That being said, the arrowroot powder ups the carbs, and I'm sure we could figure out a substitute here that's lower carb (thought of xantham gum, but it would take a better low carb baker than me to figure out proportions)...but a single serving (if the recipe makes 15, as suggested in alternate comments), it only has 4 total carbs, and could easily be a single serve treat once in a blue moon - it says they freeze well, too - and any extra carbs might come with topping, etc.

    The only subs I can think of are worse than the arrowroot for carbs.

    Yeah, my searches, too, but if you're only having one, for an occasional treat, 4 carbs really isn't that bad overall...

    I would start with 1 teaspoon of either guar or xanthan gum. I wouldn't add more until I saw how thick or thin the dough batter forms up to be.
