I am off to an allergy specialist mid next week to be tested for sensitivity to dairy. I was told to eat dairy in the few days before the test. I have dodged milk n cheese for months except rare cheesy goodness momments. Today I had cheese with my sausage and meat burger pattie. Sinus headache. I have a reliable set now of 4/4 times I eat old amsterdam or cheddar I get a headache. Philadelphia cream cheese, feta and mozerella less so.

Regardless of the official results I may have to dodge dairy to dodge the headaches. Unless she can see it is just a coincience and something else is the trigger. My food list is getting simpler by the month, now meat, leafy green veg, chia seeds, avocado, undweetened almond milk and eggs.

Good job avoiding dairy for so long! Yikes about the headaches. Great idea getting tested to find out for certain if it's dairy causing the problems. Let us know what you find out.

I am going about finding out about my food intolerances also, through elimination. So far no gluten, dairy or eggs for a week, and I feel better and am sleeping better too! Gonna take some time but hopefully I'll narrow it down.

Great work @ShootingStarUK. In October, under nutritionist/doctor's suggestion I started a low sugar diet as my primary problem was probably too many candida in my gut and they caused multiple issues. I felt great but noticed when I re-added cheese I got a headache. Good luck and patience in narrowing down your intolerances.

Good luck to you too! My food list looks almost exactly like yours, minus the eggs. And I am eating a lot of coconut milk for the cream. I miss HWC.

I plan to try to make dairy free coconut yogurt this weekend. Just need to buy the probiotics for the fermentation :)

Sounds like an issue with casein. It might be worth trying something made of goat or sheep milk to see if you have the same issue. Most dairy comes from cows with the A1 beta casein variation, while non-cow animals, and certain breeds of cow, only produce A2 beta casein.

Either way, that information might help you and the doctor pinpoint the issue.

Goat cheese I think is ok. Experiment set for tonight. Thanks for the suggestion @Dragonwolf

Experiments concluded. Old cheese bad, goats mild whereas philly cream no reaction. Doctor said intollerances can not be tested however allergies can be and some like dust mites act as lead indicators for increased liklihood an individual will have food intollerances.

Blood test tomorrow for immunoglobin state, skin test in 3 weeks then discuss with doctor the result. Also running sleep aponea and an arthritus check whilst Ms comprehensive is looking for causes. She likes my probiotics and feels that addressing the microbiome population is the best we know to treat auto immune diseases. @DittoDan I thought that you would like that.

She recommends slow food fresh from local sources. No gluten, no sugar and reduced carbs but she likes variety. My DH says he had allergies to everything as a child, so he percieves I need to just suck it up n get on with life, because everything in some way can damage us. Feeling disturbed that the answer from immune system doctor is likely to be hystamine intollerance rather than caesin, which cuts out tomato, dark chocolate and old cheeses.

Told not to eat flavoured yoghurt as they use startch to keep the flavour suspended! Not really enjoying heàring just cutting sugars may not be enough. More tastyness to cut n lacking support at home. Feeling a bit sad.

When I was doing my research on MSG and histamine, sharp and aged cheeses were on the no-no list on both sides... Something to do with the aging. Just for point of reference. @SamandaIndia

    EDITED TO ADD:

UGH, my brain didn't compute the rest of your post... Guess you already knew this.

But I found, too, that for me, that histamine was about levels. If I avoid tea and other known histamine triggers, I can still enjoy my sharp cheese sometimes...etc. Pepperoni, too, and other known histamine things.

Thanks @KnitOrMiss would be good to be able to find foods that my body does not have an autoimmune response to. I didn't know tea had histamines. Off to do my research. Just spent 30 mins walking the dog which helped calm my mind.

Have you tried Raw Milk products? Some people with intolerances to dairy can tolerate Raw Milk. I know that this is the case for myself. I just ordered some Raw Cheese this week and am keeping my fingers crossed that I don't have any issues with it. I miss cheese.

I haven't read the rest of the thread so sorry if this is a repeat... what about the amines in the old cheeses. There are much less in 'fresh' cheeses. Here's a starter site for more info:

THANK YOU!!!!! There are others like me! And you gave me more hints of what is going on.

I have been diagnosed lactose intolerant for years. I do eat lactose free cheese with no problem, although recently, it binds me up more than it used to. Goat and sheep have always been OK. Eating LCHF, I re-introduced a piece of sproated grain bread, BIG problem! We do have gluten intolerance and lactose intolerance in other family members. And I can manage high fat cream in drinks now which I never could before. Young cheese do not affect me, old cheeses do. This is opposite of lactose intolerance standards.

I am still struggling with my microbiome populations. And my bone density is low although my risk of fracture is low too. Doctor want more calcium and recommended supplementation.

So my research continues too. Lactose, gluten, caesin, amines, and histamines. (The family are all highly allergic to wasp stings.)

I suspect my diet will look like yours soon too.

Just to update, I've been having a bit of raw cheese every day since Friday and so far, no issues and generally if I eat cheese it gives me major GI issues.

Interesting. I know this works for me with sheep cheeses. Very hard to find raw cow's cheese but I will look and give it a try.

I think I will continue on my elimitation diet for a little while longer until symptoms improve more and then add back.
