    Exactly!!! I would expect someone who was obsessed with pizza and considered himself the "Pizza King" to enjoy quality gourmet pizza! Not frozen pizza, pizza bagels and dominos! That's just crazy. I bet he came from a household where hot dogs and macaroni and cheese constituted a homemade meal.

    As a low carber for years, whenever I cheated (back in my LCLF days) I always made sure it was the absolute best pizza money could buy. I was not going to waste carbs on nasty pizza.

    I'm the only one in my house following a LCHF diet and being lazy over the weekend, made my family pancakes for dinner two nights in a row. It was a treat for them. And each person ate no more than 3 pancakes, and even then it made me gag a little bit knowing how much sugar and carbs they were consuming in one sitting, so I made them eat bacon and sausage too LOL I might be able to eat 2lbs of butter in one sitting, but that's a big fat no to the rest of that.

    I found this recipe and made it without the honey. Sunday mornings I sometimes crave pancakes and this was pretty good.

    Paleo Waffles

    Prep time 5 mins
    Cook time 5 mins

    Serves: 2 waffles on my waffle iron.
    Ingredients
    1.5 cup almond flour/meal
    2 eggs, whisked
    ¼ cup canned coconut milk
    ¼ cup unsweetened shredded coconut
    1 tablespoon arrowroot powder or coconut flour (I used coconut flour)
    1 tablespoon raw honey (skipped this)
    1 teaspoon vanilla extract
    ½ teaspoon baking soda
    ½ teaspoon sea salt
    ½ teaspoon cinnamon

    Instructions

    Whisk eggs in a medium-large sized bowl.
    Add coconut milk and whisk together with eggs.
    Next add almond flour and mix together.
    Then add shredded coconut, arrowroot powder, baking soda and mix together. (I didn't have arrowroot powder)
    Lastly, add in honey, vanilla, salt and cinnamon. Mix together thoroughly.
    Pour into waffle iron until cooked through. Serve with Butter!
