Here is my egg recipe that I love to make!!
Simple egg soufflé recipe
Servings SERVES: 4Preparation time PREP: 10 min.Cooking time COOK: 30 min.
Ingredients
12 large eggs;
1 cup of coconut milk;
1 tsp. onion powder;
1 tsp. baking powder;
1 ½ tbsp. Almond flour;
Sea Salt and freshly ground black pepper;
Souffé preparation
Preparation
Preheat your oven to 375 F.
Grease the bottom of an oven ready cooking round dish of about 9 inches in diameter.
In a small bowl, combine the almond flour, baking powder, and onion powder.
In a big bowl, break all the eggs and add the coconut milk, then mix them well together.
Incorporate the mixture of almond flour with the eggs, and use an electric mixer or a hand whisker to mix it all until smooth.
Pour the mixture in the cooking dish and place in the oven.
Cook the eggs for about 30 minutes, or until the top gets a nice golden color.

I like open faced egg sandwich for breakfast. Here's what I put on it
1/2 English muffin or one whole arnolds thin
One hard boiled egg
Huge handful of fresh spinach
1 oz sharp cheddar cheese
A few slices of tomato
1 tbsp mayonnaise
Salt and pepper to taste
Microwave spinach for 30 seconds to wilt
Then assemble all of the ingredients on your bread, toast in toaster oven or regular oven. So yummy!0 -

We eat a lot of eggs in our house. My step-daughter loves them and we almost have to make 6 just for her. Our go to are scrambled eggs which I make in the microwave. Just add however many eggs you want in a microwave safe container (keep in mind that they will expand), milk and margarine/butter. Microwave usually 1 min per egg but I would keep checking and stirring after each minute until you get the desired consistency. Towards the end I usually add in some shredded cheese and pepper.
I also love hard boiled eggs. I purchased an egg cooker a while ago to make them in the microwave but it didn't work out like I wanted. It cooked them but every once in a while 1 would explode and make a giant mess so I threw that away. I now just hard boil on the stove but it's so hard to get them perfect!0 -

Being that there will be a lot of hard boiled eggs around to eat after Easter Sunday ... another recipe using hard cooked eggs ...
Slice an egg and spread it over a slice of soft italian bread. Sprinkle the eggs with a little salt and a pepper Spread some mayo over one of the bread slices. Slice a tomato and lay some slices over the eggs, top with the second piece of bread. Cut the sandwich into halves so the egg doesn't fall out as you eat it. Delicous! Eggs n tomatoes.0 -
I actually had eggs planned into my week already No specific recipes but today is tuna salad with hard boiled eggs. I mix mine to taste with tuna, mayo, spicy sliced olives, and hard boiled eggs. Also made a batch of deviled eggs yesterday as "snacks". Hard boiled eggs, yolk mixed with mayo, topped with cayenne pepper. YUMMY!0

I use my muffin pan and make breadless muffins. I put an egg in each muffin tin and then I add what ever strikes my fancy. Could be bacon, sausage, veggies, cheese or a combo. Sometimes I break the yoke and mix everything together before putting into the muffin tins and sometimes I do not break the yoke and just add the ingredients into the muffin tin and push them into the egg whites. Then I bake them at 400 for 13 minutes. They are yummy and filling. I eat 2 every day for breakfast. This hardly counts as a "recipe," but it is my GO TO delish quick lunch. Two or three hard boiled eggs (I always have a bag of Trader Joe's hard-boiled eggs in the fridge for this), a couple of tablespoons of Mayo (Trader Joe's), salt and pepper and a couple of dashes of Frank's hot sauce. Yum!0

Refrigerator crustless quiche
Add to a pie dish random veggies you happen to have in your fridge ( red peppers, sauted mushrooms, sauted spinach, sauted onions, tomatoes, basil, roasted asparagus, brocolli, etc.), some meat if you want ( bacon, ham, sausage, etc), and some cheese ( paremesan, cheddar, mozerella, etc). Mix, i like it to be about 1/2-3/4 full of stuff. In a seperate bowl add two eggs, a cup of cream (i've used half and half but its not as good), salt and nutmeg. Mix well and pour into pie pan. Make sure it gets evenly distributed. Bake 350 until sets. I stink at timing but 30-45 min ish?0 -
I've been on a stir fry with eggs kick recently. I've been making a coleslaw mix at the beginning of the week (put cabbage, broccoli, carrots, and onion through a food processor). I saute some of that mix with a bit of olive and sesame oils and garlic and incorporate some scrambled eggs in there for protein and breakfast goodness.0

I love egg salad just made it yesterday and had some leftover for lunch today. For each egg 1 tbsp miracle whip and some chopped onion season with salt and pepper. Yummy0

This is hardly "dietetic", but it is oh-so-yummy!
NO CRUST QUICHE
3 Lg. eggs
1/2 pt. heavy whipping cream
3/4 pound gruyere cheese (I use swiss, it isn't as expensive)...cubed
Veggies of choice: Broccoli & cauliflower flowers, sliced zucchini, green onions...
With fork, whip together eggs and cream
In large bowl, mix together cheese and veggies, then place these in quiche dish or any other shallow dish
Pour egg and cream mixture over the cheese and veggies. It might be higher than your dish, but it will shrink.
Bake 1/2 hour at 400 degrees, or until all cheese is melted and set
Cool until firm enough to slice. Enjoy!

My fave eggs receipt I eat every morning for breakfast
1.5 oz onions
1.5 oz green peppers
1.5 oz mushrooms sauté in 1 tsp coconut oil
Add 3 oz of spinach
Scramble in 1whole egg & 2 egg whites with .5 oz cheddar cheese

My favorite is Paleo sausage egg cups
Preheat oven to 350
Take a dozen eggs and scramble them in a bowl
12 pieces of pre cooked turkey sausage cut up in 4-5 pieces each
Sautéed peppers and onions in a little olive oil
Use a muffin pan with silicone muffin cups
Put some olive oil in each cup
Put 1 sausage link and some pepper/onion mix in each cup
Then take the eggs and fills the cups to the top
Bake for 23 minutes and enjoy!!

My favorite way to eat eggs is a veggie omelette.....2 whole eggs with onions, mushrooms, peppers and tomatoes. This challenge inspired me to make muffin tin omelettes and I now have 6 ready for the rest of the week....going to be a great way to start my day!0

Deviled eggs are my absolute fav!
- 6 eggs
- 1/4 c. mayonnaise
- paprika
- 1 tsp yellow mustard
- 1 tbsp horse radish sauce
- salt and pepper!
Slice eggs in half lengthwise, and carefully remove yolks. Mash yolks with mayonnaise. Add horse radish sauce, mustard, paprika, salt, and pepper; stir well. Spoon yolk mixture into egg whites.0 -

I have a very difficult time with eggs, so I generally only eat them as an omelette or scrambled with plenty of cheese, veg and either ham, bacon or sausage.
French toast is yummy, but I rarely make it since I don't have bread in my home. I also do enjoy a good bacon and artichoke quiche but I can't remember where I got the recipe from.0 -
We eat a lot eggs... mostly fried or scrambled with ham or bacon and cheese. Although we also love hard boiled on salads, I have a hard time keeping enough to have for salad. Every time I turn around, my middle one is doing the peel and eat routine. Can't complain.. better than cookies - although that is his chaser from time to time.
Fav treat..fried egg hard yolk with cheese and bacon on toast broth ketchup.
Fav healthy.. 1 egg. Egg whites scrambled together in pam sprayed pan, add peppers and onions. Serve with mashed avocado and a slice of toast no butter if you must.0 -
I'm not a morning person and usually eat breakfast at work. My "go to" lately has been using the microwave for eggs. I have a small Pyrex covered container that I use. I'll scramble an egg in the container with some pepper and microwave for about 35 seconds on high. I then serve it on a whole wheat English muffin with avocado spread on it. I'm sure there are tons of variations that could be done (add veggies, etc).0

German Pancakes or Puff Pancakes
6 eggs
1 c milk
1 c Flour
Blend in blender. Melt 1/3 cube butter in a 9x13 pan. Pour egg mixture over melted butter and bake at 400° for 18 min. Serve with jam or syrup.0 -

I'm joining the egg loving fan club although I eat them far less often that i'd like. If I don't poach them and have them with toast, I'm a fan of the fluffy omelette - usually done with 2 eggs.
Separate the whites and whisk until stiff.
Add a little water to the yolks and then add into the whites.
Immediately pop into a preheated frying pan with something to stop it sticking (I usually treat myself with butter)
Cook for a bit, add toppings and serve0
