I'm only just recently having to cook my own food (husbeast has limits, y'know!). So in that spirit, what are some epic low carb/keto recipes that use the dozen of hard boiled eggs I will have tomorrow? Please share!
Mine is to take a hard boiled egg, dip in salt, and eat. I bet you can do better!

If you DON'T hard-boil the eggs you can use the egg whites for meringue cookies and use the egg yolks for either (1) LC creme brule OR (2) LC curd of some kind (lemon curd, lime curd, strawberry rhubarb curd). YUM! You can always use the hard-boiled eggs to make LC tuna salad, egg-salad or bacon-cheddar deviled eggs with avocado.0

Alas, we are dying eggs so will have a slew of hard-boiled beauts. I do love just plain eggs, but I want to mix it up a bit too.
My coworker agreed that bacon in deviled eggs is life-changing.0 -
I like to pickle them... Yum0

A little relish in your deviled eggs is quite tasty too.0

I usually wind up like "Cool hand Luke" after I do HB eggs.
If only I could stop at 4..5..6 but usually not

I had my first ever smoked and pickled hard boiled eggs recently and fell in love with them.
At Walmart I found some pickled in beet juice but not smoked that are OK. The beet juice dyes them red. Not cheap but I am recycling the solution by replacing the ones I eat with fresh boiled eggs with some early success. The salt/vinegar mix works for my taste buds.0 -
I think I'm odd, but I love creamed eggs! Saute some mushrooms in coconut oil and butter until brown and almost carmelized, add some heavy whipping cream and sliced up hard boiled eggs. Bring to an almost boil, reduce heat until the sauce is thickened to your liking, add salt and pepper and devour! My family scoffs at this, I LOVE it!0

@GaleHawkins how do you smoke eggs?? I've heard of tea stained eggs (using anise, black tea, and soy) but haven't tried it yet. allrecipes.com/recipe/51326/chinese-tea-leaf-eggs/0

@canadjineh if you use a lapsang souchong or russian caravan tea in the recipe you shared your eggs would have a smokey flavour to them.0 -
Great idea re: lapsang souchong. I thought perhaps he just used a bit of hickory smoke in the yolk mix (with bacon! YUM)0

This one uses a real meat smoker. Another one on youtube who was painful to listen to used liquid smoke. It darkens the whites but not the yellows.0 -

When I was visiting China, they cooked the eggs in tea, and they were different colors... it only marginally made it taste different though...

There was a dish my mother used to make for Christmas breakfast that I used to like. It was basically chopped hard boiled eggs in a Swiss cheese cream sauce with back bacon in it., she served it over toasted English muffins, but you needn't eat those. You could make some sort of low carb biscuit if you wanted it. Now I'm going to have to make this. I would probably make the sauce with just butter, HWC and cheese, and add bacon or ham to it, and eat it out if a bowl. Or over some sort of low carb veggies or other.0

Hard boiled eggs make a great stuffing for meatballs. I use 1/4 or 1/8 (depending on final size desired) piece of egg, green onion or chives & cheese with any favorite meatball mixture. With this in the center, the meatballs usually turn out to be shaped more like a football than round. Cook as usual & enjoy!0

Oh you just reminded me of the tasty jangjorim I got to eat in Korea. Maybe I can made a ghetto-fied version with soy and beef bouillon. ^^0 -

We make tea eggs all the time. Here's one recipe. They make a great snack.

If you like green olives they taste really good diced up and added to egg salad. Note: I don't typically add any salt to the egg salad if I'm using the olives.0

I like pickled beets and eggs.
I had deviled eggs for breakfast this morning, but instead of mayo I mixed the yolks with guacamole.
