I have a recipe that calls for 1/4 cup Unsweetened Apple sauce... Why would you use instead?

The main benefits to using applesauce in this marinade would be for sweetness and the fruit enzymes would help tenderise the meat. I would just skip it, the recipe will work just fine without it. If you want sweetness, use your preferred sweetener. If you want to tenderise your meat, you can just run it with some baking soda, let it sit for 15 mins, then rinse it off really well. You can even take it a step further with a process called velveting if you're feeling fancy http://www.seriouseats.com/2014/07/chinese-velveting-101-introduction-water-velveting.html

But the quick and easy option I mentioned will still give you some really nice tenderising, way more than just the fruit enzymes.

i would use the applesauce you can get ones that don't have added sugar and only the natural apple sugars. have you calculated to see the nutrition values on the recipe, I can't imagine its too bad even for very low carb.

Oh now that's easy: use either apple extract or apple oil to replace the applesauce. Same flavor, almost no carbs / sugars.

LorAnn Oils sells an apple oil that I like and use. Make sure it's the superstrenth "Apple" flavor and NOT the "Green Apple" flavor.
