New day for us both.

Today is a new day for Elijah and I. We both feasted on junk pretty much. I told him yesterday that I would just throw the junk out today if I needed to. I ate my combos and ice cream. This morning I drank my BPC and packed me some pepperoni to snack on. I made him a turkey wrap with spinach and kale, carrots, apple, water, and a small snack bag of turbos (his small treat.. I figure he can handle that ). When i get home i will eat me some eggs and bacon. For dinner tonight it will be fish or chicken and a veggie for him.

    If you like baking and cooking you might want to look into replacing some of the cookies, and muffins with low carb versions that uses coconut flour or almond flour. My friend had switched to making baked goods for kids using these types of ingredients rather than regular flour. They love it! Always a good thing when you start teaching kids about nutrition while they are young. Good luck to you both. I am sure you will do great.

    I love to cook but I have never been a baker. I have bought both almond and coconut flowet. My boyfriend used the almond flour once. I also bought flaxseed. Just haven't done anything with them. You know my son is not a cookie and cake eater. We both love ice cream. He actually asked me this morning how to make ice cream. I made us a smoothie with fruit. It did not work.

    I made strawberry shakes yesterday. I used roughly a bag of organic frozen strawberries, but it wasn't full, so less than 10 net grams per shake, with about 3/4 cup of unsweetened almond milk, and roughly the same of heavy cream, to taste, slightly sweetened. My guy was very happy. It was funny. Higher carb than I'd like, but overall, for a treat, wasn't too bad.

    Also, there are TONS of recipes for keto ice cream out there!!! Some super easy, some more complicated, but tasting better, etc.

    EDITED TO ADD: store those flours in the fridge or freezer to prolong shelf life!

    @wishfullthinking79 Don't remember where I got this but it's not bad. Makes about 1/2 cup of ice cream

    ZIPLOC ICE CREAM

    1 tablespoon artificial sweetener
    1/2 teaspoon Vanilla Extract
    1/2 cup Heavy Cream
    6 tablespoons Table Salt
    3 cups Ice
    1 Sandwich Sized Ziploc Bag
    1 Gallon Sized Ziploc Bag

    How To Prepare:
    In the sandwich sized ziploc, combine the sugar substitute, vanilla extract and heavy cream. Seal the bag and shake lightly to mix ingredients.

    In the gallon sized ziploc bag, add 3 cups of ice (or fill half the bag with ice)and add 6 tablespoons of table salt.

    Place the seal sandwich sized bag into the gallon bag and seal the gallon bag. Shake the entire contents for at least 4 minutes (shake longer for harder ice cream).

    Once desired hardness has been achieved, remove smaller baggies and rinse thoroughly with cold water (if you miss this step, you may wind up with salty ice cream!)

    @reblazed thank you. This actually sounds pretty interesting.

    @KnitOrMiss ypu know I didnt add any hwc or almond milk to it. Maybe that would have made it more like I cream for us.

    Thanks for the heads up on the flours. I will have to make room in the fridge for them.

    @wishfullthinking79 that is good news. My first 90 days was kind of crazy and after the first two weeks the hardest part was getting my % of fats high enough. Best of continued success.

Not sure about the brown rice syrup never heard of it before but was thinking to sub it with Swerve or stevia.

    Update:

    So I had a really good day yesterday. BPC for breakfast. For lunch a scrambled egg with cream cheese and green chili and chorizo with fiesta cheese. For dinner I ate 2 pork loin chops 4.2 oz dipped in almond flour and fried in olive oil with a small serving of broccoli cooked with butter. For my early afternoon snack I ate like 5 slices of deli pepperoni and small pickles.

    I won't lie I wanted to eat some reeses but I did not give into the the urge.

    *I also made sure my son ate better. I did allow him to have a small snack bag of turbos for lunch, a handful of them for snack, and 2 starburst. I know that still is not fantastic but I believe acceptable. I don't want to take everything away all at once.

    I keep good dark dark chocolate in the fridge. Perhaps that with a smear of PB or almond butter would quell the Reese's urge?

    Baby steps may be a better way to introduce a kid.

    @Twibbly I made some some fat bombs a while back with coconut oil, 100% chocolate, unsweetened cocoa, almond butter. I just couldn't really eat but like a bite of them. I am not big on chocolate to begin with. I can do the white chocolate reeses cups and reese pieces. I don't know where I could find chocolate that is not 100% because it is so bitter.

    @Sunny_Bunny_ that's really nice of you. Yesterday he told me he didn't want to diet. I told him it's not a diet it's eating healthy. Then of course my boyfriend was complaining about having to use almond flour instead of regular flour. He was saying because I don't like it he has to change his way of cooking. I told him it is healthier. I know I know. Then at dinner time he told me potatoes might not be on his plate but the were on his mind. Lol when I told him no potatoes he responded with no pork loin.

    Lilly's makes chocolate that using stevia. Natural Grocers carries it here. I also have some lovely dark (I think I started with 80%, 87%, and 90%) Taza chocolate from Whole Foods. The 80% is lovely, but it still might be a bit bitter for you.
