Liquid Aminos vs. Soy?

I gave up gluten, soy and dairy about 3 months ago now. I feel great and have finally started to see some pounds come off. I started using liquid aminos as a soy alternative, but recently read on the package that it is actually soy, but non-fermented soy.

What is the difference? How do you know if something is non-fermented? Is Tofu a healthy soy?

I've tried Coconut Aminos too... but they need to be refrigerated, so its not as easy to keep at my desk for lunch

I've been using Coconut Vinegar for everything that normally calls for soy. It's delicious! I found it at Whole Foods.
