I've successfully used zucchini noodles for my tomato based sauces but don't like with my Alfredo sauce. Does anyone have another suggestion of a good replacement?

Or even better, chicken thighs! I do a good homemade cream based Alfredo over grilled skinless chicken thighs (don't like sauce with skin, soggies up) and sprinkle shredded cheese over it all. Very nice. The sauce also goes nicely on roasted or steamed broccoli, cauliflower or asparagus if you want a veg.

This is what I do. Except I also bulk it up by throwing in lots of broccoli.

This recipe for Faux Egg Noodles works surprisingly well and makes a decent sub, if you have the patience!0

I've done alfredo sauce over chicken and sauteed broccoli and mushrooms. That was pretty good. But I actually like it with zoodles as well.0

For those who make their own Alfredo sauce, is it easy? I have never made it before.

All the ones I've seen are around 3gms for 1/2 cup. Prego, Newmans Own, bertolli etc0

Making the alfredo sauce with cream cheese is easy. I have tried without cream cheese and was not consistency I wanted. The best part of using cream cheese is that if you have leftovers, it will harden back up and you can use it as a savory fat bomb. Homemade Alfredo sauce: equal parts butter, and heavy whipping cream, heat over med/low heat (stirring constantly)add parmesan cheese to thicken, season to taste! Fresh grated cheese works best, but the other stuff (in the green shaker) works in a pinch!0
