Healthy Crock Pot/Slow Cooker meal ideas?

This is a busy time of the year for us with sports and I'd love some new ideas for crock pot meals!

SkinnyTaste has some great crockpot options. One of my favorites is the chicken enchilada soup. Also, it's easy to make shredded chicken or pork in the crockpot and those are both pretty healthy.
For the shredded chicken, I put in some chicken breasts then cover with a jar of salsa, add a can of drained black beans and if I can spare the calories add a cup of frozen corn. Cook on high or low whichever is better for you, then when its ready, shred the chicken and serve either over salad or in taco form.

I love shredded pork, using a shoulder, I rub it down with spice the night before then let it sit all night, I put it in the crockpot with a bottle of coke (hear me out!) I cook it all day, then drain the coke off, I mix my bbq sauce with some pineapples, brown sugar (just a little bit) worestire sauce, and mustard. then let it cook in the crock pot for another hour or so on high.... then make tacos with slaw.
