Need Recipe ideas for Cauliflower "Mac" and cheese that can be made while camping

Hey y'all,
I'm going on a camping (glamping) trip this Memorial Day and I'm signed up to make dinner one of the nights! For everyone else I'm making my delicious chicken-bacon-broccoli mac and cheese, which is easily done on a camp stove.
But most/all the recipes I see for cauliflower "mac" and cheese (for me! And anyone else wanting low carb on the trip!) requires or heavily relies on baking it.
Does anyone have any GREAT recipes that would tolerate adding chicken to it and can be made with just a camp stove?
