1 pound eggplant peeled and salted and let sit to remove water on towels for 20 minutes(this removes bitterness) cut 1/2 inch slices should be around 8 to 9

spray baking dish with pam bake at 400 layer eggplant in the bottom
top with super thin sliced ****ake mushrooms remove stems and cut in thin strip
top with 1/2 jar ragu chunky veggie sauce
top with 1 cup of mozz cheese shreeded
top with 1/2 cup Itailain style bread crumbs


bake at 400 for 30 to 45 minutes till chesse melts and eggplant is done may need to cover with foil to prevent cheese from browning to much
