For those who would like to try a vegetarian low carb way of eating, here's your chance to do it. Set up your meatless way of eating with whatever specifics that you want, though I do recommend at least keeping eggs in. Other than that, the only real rule is...well...no meat.

Neat idea. I gotta say, we are a group of extremes. Kind of cool.
I won't be participating in this one, but I am looking forward to following the progress of those who choose to do this.2 -

Calling our vegetarian friends: how do you achieve low carb and meatless? Love to hear what you enjoy.
For me, I am realising cheese, yoghurt, spinach, tomatoes and cashews are part of the histammine containing list so I should not eat them. Checking if I could genuinely go meatless to learn ways to diversify my low carb options.3 -

I would love if someone could prove this possible! I so miss the variety of veggies I used to eat as a vegetarian. But I'm not taking this challenge, every experiment I did took me then weeks to stabilise BG. I'm very interested in follow if anyone takes it though. Good luck!

There would have to be some catch to do meatless/animal free keto...usually liberally relying on eggs, high fat dairy, considering fish as meatless, gelatin, or some nasty supplement (like pea protein) not obtainable naturally.
Anyone do nuts, seeds, &/or legumes as a protein on vegetarian keto? Seems like the only way to get a decent 50g protein with minimal carbohydrates and high fat content.0 -

One way to modify this so more people could do it would be to have one meatless meal.
Which I could totally do, since I mainly eat a giant salad with veggies and only add chicken or salmon as a garnish.
I'd probably add a hard-boiled egg and/or sunflower seeds instead.4 -
I tend to have one meatless meal per day; sometimes two. Doing one meatless meal per day is pretty doable for most. Good idea!1

I love it! I often have one or two meatless meals just to keep my protein intake under control. In fact just this morning I had a veggie omelette for breakfast, and my lunch salad is often just topped with egg and cheese.0

Keep in mind, you don't have to be keto. Non-keto low carb is a fine option.2

Yeah, I eat 100g/day.
My meatless lunch was 33g by itself.1 -

Still showing solidarity with a Meatless lunch every day. I can't promise this while camping this weekend though.
But today will be a low-carb vegetarian pizza using a LC wrap, mozzarella, onions, peppers, and tomatoes. Can't wait till lunch.
Anyone have veggie-lunch ideas besides salads. I do get tired of those sometimes.
Maybe tomorrow will be an avocado/veggie wrap?

There was an Italian veggie casserole posted on FB a while back. Sliced thinish zucchini, squash, eggplant, tomatoes, onions, etc., all standing on end. Pour Italian seasoning mix and I think olive oil over and bake...

@baconslave I fail at Meatless...but I like this recipe for spinach and artichoke dip. You can use celery or cucumbers to dip!

I had a meatless breakfast - Scrambled eggs w/ shredded cheese, avocado, salsa and sour cream w/ coffee and single cream for 20 g protein, 7 g carbs and 34 g fat. And I often have those same toppings on a pile of romaine lettuce for a meatless lunch.
It's not too hard to do veggie Keto if you eat dairy and eggs, but I can definitely see that getting boring eventually. I ate a lot of lentils and legumes when I was vegetarian.0 -
I would participate but I'm afraid it would be cheating. I've been a vegetarian for 12 years and started keto in February. So for those of you saying it's not possible it certainly is!! I'm 20 pounds down from my SW. I'd say have a look at my diary but you'd be bored. I eat the same thing about every day during the week. I try cooking experiments on the weekend but only track carbs to give myself a "break" (hey, it works for me.)4

Definitely not cheating. Many people doing the all-animal or ad-libitum challenges were already eating that way before it started. Having people who have already been doing it is inspiring and helpful for those trying it out for the first time.5 -

@DananaNanas yes please. Hard to imagine a low carb veg solution other than plates of leafy greens with maybe a mushroom or tomato n avocado for those who are not allergic to them. Love to see your "boring" diary and food plans. They sound interesting, useful and exciting to me.0 -
Tumeric is meant to be healthy so I added that n coconut milk n egg to 4 low carb vegies and made a veg curry last night. Yum. Fried the veg in coconut oil first. Veg was Bimi, broccoli, celery and half a courgette. My first attempt at creating a meatless may dish.2

@SamandaIndia - Make sure you add a tiny bit of black pepper - it majorly amplifies your body's ability to absorb that turmeric!0

Sounds yummy.
Do you find that the turmeric is helping with inflammation? Or is it hard to separate its effect from your diet change?
I had a very good avocado, tomato, and onion wrap yesterday.
Today is brocolli/veggie medley with this tomato alfredo sauce (cream cheese, diced tomatoes, mozzarella, spices). I made the sauce for a hamburger casserole last night for the fam, but reserved some sauce for me to use today. Deliciousnessssss!0 -
@baconslave your dish sounds delicious. In theory tumeric should help but as you point out, difficult to seperate from other things going on with my diet. Will let you know if I can seperate it out yummy and on a short list of "can eat" foods right now0

That is one thing I do miss from going carnivore -- that lovely combination of tomatoes (particularly a good beefsteak) and a cool, crispy lettuce.
And olives. I think I'd live on olives if I ever went keto vegetarian. :P2
