Ever heard of Salo or Lardo?

Found some cured pork back fat in my local grocery store. Looked it up on the net and found both Salo and Lardo. European ethnic foods.
Salt cured, and eaten either raw or fried.
Truly a "fat bomb".
I've been eating about 60 grams per day for a couple of weeks with no ill effects.

    YUP, I'm half Ukrainian. I had forgotten about ordering some when I was at the German deli last month. Eastern European foods include many interesting fats. Recently went back and had some Head cheese and polish sausage. It's great to explore different ideas to keep this WOE interesting. I can't believe what a foodie I've become. Good stuff.

    I like salt pork, which is probably rather similar. I've realized I'm really, really into pork. And fatty beef. I love meat so much.

    I've been hitting up my local European deli too. Lots of great salamis and sausages.

    Salo has some thin rind on it, but is cured in salt. I'm eating it raw, but some people fry it.
    Much more like salt pork but it is only the fat taken from the pigs back.

    sounds like salt pork, my bf's grandmother used to put a hunk in her red sauce when she cooked, he wanted me to get some years ago and I said no, that was back before low carb when fat and salt were the devil lol
