I have never grown eggplant and i am growing some this year. i know I like the taste, but I need some good recipes. Preferably for grilled eggplant.......but am open to more

    rinse egg plant
    Peel purple layer off ysing potato peeler
    pat excess water with paper towel
    Scramble one whole egg or egg white
    Slice eggplant into flat circles
    season with salt pepper dried parmesan cheese garlic powder oregano
    Dip into egg. Let excess egg drip off
    Dip into or sprinkle with breadcrumbs homemade or store bought
    put a small amount of oil in pan as you would for a pancake
    fry on each side until golden brown
    drain on paper towel

    Top with spaghetti sauce or stewed tomatoes and shredded mozzarella cheese

    You can simmer the sauce or tomatoes beforehand.
    Enjoy.

    You could also make eggplant lasagne.

    I just tried a new eggplant recipe tonight! I'm not an adventurous cook, so this was a bit of a stretch for me - but it was delish!

    Diced eggplant, zucchini, halved cherry tomatoes, garlic, parlsey and basil, parm cheese baked. Here's the recipe:

    You can also use the prepared eggplant above in place of Lasagna Noodles... it makes the most awesome low carb casserole. You layer it in the pan with the meat and sauce and the ricotta custard. It's rich and delicious - a real treat.

    I use a brush (like for grilling) and brush on dressing (Italian or honey mustard) on slices and top with a little cheese, bake for 10 minutes or so, till the slices are cooked through and cheese melts. Yum!
