German Cucumber Salad

SALAD
2 large cucumbers, peeled and thinly sliced
1 small onion, peeled and thinly sliced
3 small roma tomatoes, thinly sliced

DRESSING
1/3 cup sour cream
1/4 teaspoon Dijon mustard
1 tablespoon white vinegar
2 tablespoons HWC
1/2-3/4 teaspoon sugar replacement
1 tablespoon chopped fresh parsley
2 tablespoons chopped fresh dill
1/4 teaspoon pepper
1/4 teaspoon salt, to taste

Directions
Place the cucumbers, onions and tomatoes in a large bowl. Set aside.
In a small bowl, whisk together all dressing ingredients. Pour over salad mixture.
Toss to coat well.
Chill at least 2 hours before serving.

    My mom and aunt always used to eat this fresh from my Grandpa's garden when I was growing up. I was never a fan because I can't stand raw onion and back in my carby days, I couldn't tolerate sour cream and such without getting sick. I still can't do raw onions, but sour cream and I are friends now. I wonder if this would taste okay without the onions? I might try it if so!

    I think my only change would be to use a mandolin on those cucumbers. Uniform and so much thinner then I can get with a knife. That would be fab with salmon. I always make my salmon with dill, lemon, and butter. The dill in the salad would pick up the dill in the fish. Yummm.
