Hi all.... any suggestions for paleo breakfasts that won't spike blood sugar? I just got diagnosed with Gestational diabetes and am trying to stay off medications. I am thinking about going back to baking with coconut flour or almond flour to do bread products.

    Eggs are always easy with low starch veggies, avocado and/or salsa. Omelettes, or scrambles, or even just boiled eggs with avocado if you're in a hurry. If you don't do eggs, try something unconventional, like tuna salad, hamburger or turkey burger with veggies, or chicken with pesto (you'd have to make your own). If your gestational diabetes is moderate, and not severe, and you can tolerate some fruits, maybe try berries with almond butter. I've actually done berries with almond butter inside an omelette base, but spiked the egg with vanilla extract and cinnamon.
