Husband's unintentional weight loss success

This is kind of funny. My husband just had his annual physical, and he's lost 20 pounds, since I went low carb, and he's been eating my higher fat cooking. Since he has pre-diabetes, it's a GREAT thing.

Low carb is awesome.

    That's great! One of my revelations when I began LCHF is that I now eat like more my husband has always eaten (except his taters). He has never had a weight problem.

    My boyfriend has been losing weight too - his pants are getting too big - and he has only been eating a LCHF dinner. His other meals are SAD oriented.

    All my family and friends have been commenting on his weight loss and I'm sitting there like 'Hello?! I'm actually TRYING!'

    I know. He loses 20 pounds without trying, and I've lost 2. Then when I tell him it's the low carb meals, which I've mentioned about 20 times, he acts like he's never heard of such a thing. He thinks it's because he goes to the gym, which he does, but has been doing for years. But as long as it's working I'm happy because all of his brothers have diabetes and I don't want him to get it too.

    I hope my Rowdy gains some of the benefits. I'm sneaking LCHF into his meals as well, but he eats his carbs at every meal too....plus nightly ice cream. I'm going to have to try and make LCHF ice cream one of these days, give it to him and see what happens.

    My hubby has a serious sweet tooth! He has been trying to curb in order to support me in this journey but he killed me on the weekend when he brought a dozen donuts ARGH!

    @anglyn1 I too am not fully impressed with my $6 pint of Halo Top. It's pretty good, but I am disappointed by the lack of fat. Have you come across any high fat protein ice cream, by chance?

    Will I have to make my own?

    Can't blame him re Halo Top. Tried it. Thought it was so bad I couldn't even force myself to finish the Pint. Ended up throwing the rest away and I hate wasting food. That said, there are TONS of excellent LCHF Ice Cream recipes out there.

    Really, all you have to do find them is just google "Low Carb High Fat Ice Cream Recipes" and too many to count will come up in the search results. In the past year I've made: strawberry dragonfruit swirl, salted caramel chocolate chunk, white chocolate raspberry, lite brown butter pecan, roasted rhubarb dark chocolate chunk, easy lemon, etc. It's about time for me to make up a new batch and I'm thinking about strawberry rhubarb which I may make this week-end!

    It's this recipe

    3 ripe, Fresh California Avocados
    1 lemon/lime, juice only
    1 Tbsp. vanilla extract
    1 cup creme fraiche or sour cream
    1/4 cup heavy cream
    1/2 cup honey
    1/2 cup roasted, unsalted, pistachios (shelled)

    Only I left out the vanilla extract and put in real vanilla and substituted erythritol with some stevia drops for the honey. I don't like my icecream spectacularly sweet: also when it's been through the icecream maker it's less sweet than when you taste it raw, so to speak.

    Anyway: blitz everything in a food processor, but leave the pistachios, you'll add those later. Run the mixture through your icecream maker of choice, add the pistacchios.

    That's it. Easy peasy.
    Last night I made SUCH a great treat. I have been dying for ice cream. Its my favorite thing ever. So I took 2 cups of heavy whipping cream and a box of sugar free choc jello pudding and put them in the blender - then froze for one hour and it tasted EXACTLY like soft serve from the ice cream store. The HWC has zero carbs and the Jello SF pudding has 8 carbs per serving - 4 servings per box.

    I posted this on a facebook group - and got completely beaten up over it. Is it really that bad? The hubs and I split it into 4 servings - one for each of us and one for our 2 kids.
    I sometimes make ice cream. Lactose free heavy cream, vanilla, sweetener. Heat slowly, add in chosen flavor...raspberries, caffeine free coffee etc. Add 1-2 eggyokes. Stir in low heat for a minute or so. Chill mixture in fridge, then use in ice cream machine, unless you have the expensive versions that can churn from hot.

    Best made fresh. It gets pretty dense since no gluten or antifreeze, which commercial producers often use to keep ice cream softer.
    Place cream and raspberries/blueberries in the blender until smooth. Mix in unsweetened greek yogurt by hand. Freeze in lollypop moulds. If making it for children I use sweeter/more fruit (strawberries and mangoes work well). I don't add sweeteners. Cream + cocoa powder + coconut oil and then greek yogurt also work great but may need some sweetener for those not used to 99% chocolate.

    It helped me a lot when I was starting because icecream was an addiction. Now I rarely want it but I will be making some for Summer, both because I like the idea of having icecream available and for visiting children.
    I recently came up with an "Ice Cream" Recipe. It's meant to be played around with to fit macros for that particular day. It's also super voluminous! What I normally use is:

    -240 mL (1 cup) unsweetened almond milk
    - 30g (1 scoop) protein powder of choice
    - 30 mL (2tbs) HWC
    - 7-14g (1/2-1tbs) melted coconut oil
    - LOTS of ice

    Blend everything except ice until smooth texture. Blend in ice. Eat.

    420 cal, 34g fat, 25g protein, 2g, carb. Meant for 1 person, but could be split however desired.
    I just made some raspberry ice cream.

    For individual amount.
    Put in a small container and freeze everything ahead or use frozen berries.
    1.5oz fresh raspberries
    3tbs HWC
    Blend

    I have a magic bullet type blender and used the smaller container.

    Nope not me, I've tried a few but they weren't successful. The one that is good is to put heavy cream, cocoa powder a tiny bit of salt and vanilla in a small ziploc bag, then put ice in a big ziploc bag and add salt to that, put the small bag in the big bag and shake till the cream is frozen. It's really good, like soft serve but kinda high in calories. There was a good kindle book that had recipes too I'll see if I can find the link, it was free before.

    Just for the record, heavy whipping cream is not carb free. It is effectively so if you are using small amounts in coffee, but 1/4 cup has 1.7 carbs, 1 cup has 6.6 carbs and so forth.

    I use a heavy cream entry that reflects this, ditto for eggs. Whole eggs have trace carbs that add up. Cheese too. Significant amounts? Absolutely not.

    But for example, if I eat 4 eggs (2.4 carbs) with 2oz of cheddar cheese (0.8 carbs) and 2 big cups of coffee, each with two tbsp of hwc (1.7 carbs), there you have 4.9 (5) carbs that you were likely counting as zero.

    Not a big deal for most of us, but food for thought.

    My husband has lost right at 20 pounds while eating a lazy low carb, high fat diet. He sees bread as evil (his word) now! But he still eats more fruit, and veggies, than I do, and he drinks his beer regularly! As usual men can sometimes have it so much easier!

    He was concerned that he was losing too much, but I assured him that the weight loss would stop when his body reaches his ideal weight (is a steady 178 now). I think he finally believes me! I'm so glad he doesn't bring carbage into the house! But, he has developed the taste for 86% dark chocolate with some peanut butter! Says the taste of milk chocolate is nasty now! I love it his new attitude!

    He gets his labs drawn next month, and I'm excited to see them!

    Last week I learned last summer our then 17 year old 6'4" son dropped from 240 to 200. He does not talk about health stuff but he had seen me drop from 250 to 200. Basically he cut back on packaged processed food like sweet rolls, etc plus he and I were working on putting in nearly an acre gravel parking lot at our church nearby. I was on the backhoe and tractor and he was on the ground helping clean up, blazing paths for the surveyors plus lawn care. He is proud he lost the weight.
