Cheeeeese Dip

So last night I made an 'on the fly' low carb cheese dip and it came out just... fantastic. It would be great to take in a slow cooker or something like that to all those cookouts and get-togethers coming up as a vegetable dip or a pretty much anything dip. I was dipping fresh broccoli in it, and also put it on my burger last night. Nom nom nom. Plus non low carb people can dip their chips in it. So I thought I would share.
So basic recipe is as follows:
4 tablespoons butter
2 cups heavy whipping cream
4 cups shredded mexican blend cheese
1/2 tsp garlic powder
1/2 tsp chili powder
1/2 tsp cumin
1 tsp salt
2 Tablespoons of ortega medium taco sauce
Small can Diced green chilis
Melt the butter in a small pan. Add the cream and the spices. Simmer for 10 minutes or so until thickened, but don't boil it. Remove from heat and add the cheese, whisking while adding so that the cheese melts into the cream. It will be SUPER thick. Return to very low heat, add the taco sauce and the chilis and enough cream to thin it out to the consistency you like.
The whole pot has around 20-25 carbs in it.
