Sweet Crunchy pork rind Granola/Cereal- make your own

I LOVE crunchy in my yogurt, and sometimes I MISS cereal just for the crunch.
I joked about sweetening pork rinds, and the ONLY flavored ones are spicy/hot, the opposite of what I needed.
Well RuledMe guy just came out with a salted caramel pork rind cereal. at the same time I finally made my batches of vanilla sweetened pork rind...here is my recipe -- you CAN add seeds to make it more like granola.

1. Use a buttered flat pan or dish, crush the light fluffy pork rinds a bit- the plain ones.
2. Sprinkle or spray vanilla flavor, sprinkle cinnamon, then erithritol ground/powdered.. or your sweetener of choice, or none.
3. (or try some other liquid flavorings like "sugar cookie, apple pie, raspberry" etc. there are a ton of these sold online)
4. Heat the toaster oven to 400...toast the rinds for 4 minutes...don't burn, but make sure they are well toasted, as it removes the rind taste.
Just add to your yogurt, and eat soon after as they will soak up moisture. I make mine fresh each morning, and it leaves a nice smell in the house.
Or just eat as toasted treat. NO carbs, and some good protein.
I PROMISE it is the PERFECT NO CARB replacement for anything with carbs like ANY plain cereal, brown rice crisps (12 carbs per 1/2 cup) or any granola with unwanted sugar..the LOW sugar/carb brand is still 12 carbs per 1/4 cup, and some high seed ones are a bit lower.
You can also add: hemp seed, flax, ground almonds, pumpkin seeds or any other seeds like chia to the toasting too.

I'm SO adding your recipe to my list, too. I have a running list on these. And @Sunny_Bunny_ had a simple one kinda like keto trail mix - coconut flakes, dark chocolate, and something else - nuts maybe? that's her go to snack!0 -
I just put coconut flakes, dark chocolate chunks that I just cut from a chocolate bar myself and almonds in a Baggie. Ready to go snack.
If it's going to be warm and the chocolate might melt it could just have some cacao powder dusted on it instead of the chocolate. Or just skip that entirely.
I'm sure other nuts would be good too.
It's something that really hits the spot when I want something sweet. I don't allow myself to "treat a sweet tooth" much because sweets were once a big problem, but this is good without creating the feeling of needing it in my life every day.1 -
@Sunny_Bunny_ So, I've a question about coconut flakes. I broke down and picked some up yesterday because I was curious. But they are so dry. Like I ate maybe 1/2 tsp worth, and I felt like a I needed to drink a gallon of water! Did I get a bad brand or something? I wasn't crazy about the flavor (not a coconut fan), but I can deal with it... Was just wondering if I got crap - or if I need to figure out another way to eat/prepare them?0

I've bought Bob's Mill or whatever that brand is before and it was good but I prefer Lets Go Organic. They make one that's toasted flakes too. I don't find them particularly dry. I mean, they are a dried coconut flake, but they're no more dry than I would expect them to be. The size of the flakes are bigger with the LGO brand too.1 -
Yeah, I got whatever the brand was they had at WM. Some organic, in a green bag. They were toasted, but they were like crazy dry!!!! I'll look when I get home... maybe I can butter or CO them up?1

I eat unsweetened coconut with sliced almonds for a little crunch. I add a little cinnamon for flavor. It's a little dry but that's a good thing for me because I'll eat it more slowly.1

Thanks, @kpk54 - I might try that... I bet if I made that caramel stuff at the link above and put it on it, even my guy would eat it as a healthier snack!!!1

This thread is so timely!!! My 15yo son says he is interested in LCHF however he misses cereal. Definitely going to go over these with him tonight1
