ETA: I doubled the recipe above, then divided it between 3, 8-oz (1 cup) Pyrex ramekins and cut the microwave time down to 1:10 and they're a perfect size. My son liked it too, which is something because he doesn't like many of my low carb efforts!

    @bametels - I cooked the egg in the same ramekin I cooked the muffin in so that it would be the right size - pricked the yolk a few times and micro for 40 seconds. Perfect fit, didn't stick in the dish either. Added a bit of Havarti and some mayo on the muffin and Oh My, so good!

    Yeah, it's pretty much as the exact same thing used as the base for all of Craig's mug cakes on ruled.me.

    I suppose there really is little that is truly original anymore LOL - I haven't spent much time on Craig's site yet so I hadn't found them there!

    Funny! I just made these for first time today too. It was OK. I accidentally put too much salt in mine and it tasted way too salty. I look forward to trying different variations of this recipe.

    I buy Wellbee's from Amazon, it is as fine as Honeyville but not as expensive!

    I just use King Arthur's almond flour. It's fairly expensive, and will turn rancid fast if you don't keep your fridge set pretty cool, but that's because it's literally nothing but finely ground almonds, without bulkers or preservatives. Walmarts in my area carry it, but each one is a bit different.
