Summer time meals

Ok everyone I need your expertise,

So it is crazy crazy hot here and I live on the 6th floor of an apartment building with DH and 2 cats... we have a small air conditioner that works for a small bedroom and 2 fans but it is just not cutting it. It is making it so we don't want to cook and therefore I am failing hard core when it comes to trying to eat LC. I keep defaulting and then trying again and over all it is making me discouraged. So I am wondering what do you all do when it is hot as Hades and you don't want to cook and don't have access to a BBQ?

    No, wait..

    Lots of ice water loaded w sodium, iced coffee w coconut milk and protein powder, cold guacamole or cream cheese dips w celery, cold soups....

    And it's easier to add a few hours on one or both ends to your nocturnal fast when you're not that hungry.

    I do lots of salads in the Summer and I buy cooked meat to toss on the salad, creamy dressing and avocado for fat, no oven required.

    When I do cook, I tend to do everything in one pot to keep it quick and simple, for example I had sausages with peppers, mushrooms and cabbage sauteed in one deep frying pan, took 10 mins on the stove.

    Protein shake. Tuna salad. Egg salad. Chicken salad. Some stores sell hard-boiled eggs already cooked. Many nowadays also sell pre-cooked rotisserie chicken too. 1/4 cup cottage cheese mixed with 1/4-1/2 cup pecans and 2-4 cut up strawberries.

    Too late for this heat wave but if you have room in your freezer you can pre-cook for the next one. When this heat wave leaves you can bake several meals worth of chicken, beef patties, tuna melt casseroles, fish, or whatever you like. Freeze them in meal sized portions, then thaw and reheat when it's too hot to cook.

    Mixed greens topped with canned tuna or chicken and avocado. Buy a rotisserie chicken, and serve with raw veggies. Smoothies. Nuts. Homemade ice cream. Homemade whipped cream and berries. Refrigerator chia pudding (makes a great breakfast or snack). Use a crock pot, they don't add to the heat really. Anitpasti. Snack plates with cold meats, cheeses, olives, etc.

    Lettuce wrapped sandwiches. Microwaved meals (you don't want to do this all the time, but in a pinch, to stay on diet, it should be fine). The point is...there's a lot you can do, if you really want to stay on the diet. Don't allow yourself to sabotage your goals. =)

    There have been a lot of good options already listed here. What I usually do is wake up early on the weekend (so it's cool outside still) and make a huge batch of meat, put some in the freezer, some in the fridge. I have all the windows open while I'm cooking and by the time I'm done the house is still a decent temp as the outside air cools the house while I cook.

    But if it's not even cooling down at night where you are right now then I would buy precooked meat, pepperoni and cheese, tuna salad, avocado, smoothies (protein powder, unsweetened almond or cashew milk, avocado).

    We like lettuce wraps with lunch meat and cheese. Also I make salads with cut up lunch meat or pepperoni and cheese on top. Or you can get a rotisserie chicken and put that on the salad. Or usually the day I buy it I'll serve it with microwaved steam in bag veggies and then use the leftovers for salads. Very fast and easy! Sometimes I make something on the stove that cooks really fast. Like hot dogs. I buy the lowest carb canned chili I can find (Skyline brand at my store) to top them and sprinkle on cheese. It only takes about 5 minutes to heat the chili and the hot dogs on the stove.
