I have buckled down again to healthy eating. One thing that had me hopeful was my family's reaction to pancakes and muffins made with coconut flour and almond meal. It's not something I'd do every day. Once a week, maybe.

But it turns out I can't digest that combination.

If I just had something I could fall back on once or twice a month, I wouldn't get so tempted by conventional baked goods.

I know it would be best to Whole30 it (i.e., not try to paleo-ify recipes) but I think if I had the option in my back pocket, to make scones or pancakes or muffins in blueberry season, I wouldn't actually need to do so vey often.

Does that make sense?

Have tried taro and plantain for baking and don't like the result. Any other suggestions, or is it just a dumb quest?
