Low carbing the family

Dinner tonight was crockpot beef chuck roast, baby yellow potatoes and green beans. I had a moderate amount of green beans with butter and a large portion of the meat. My husband had 7 or 8 baby yellow potatoes, two smaller portions of meat and a moderate portion of green beans. My son, who doesn't like green beans, made himself a Romaine salad with shredded cheddar cheese and ranch dressing and had two fairly good-sized portions of meat. One of my daughters ate nothing but a large portion of green beans and three small portions of meat, and the other daughter who was home ate 3 or 4 baby yellow potatoes, a moderate portion of green beans and 3 small portions of meat.

    Yeah, 5 of us killed a 2.7 lb roast, lol

    That's fab! Your kids are learning some great habits :smile:

    When I first started, I'd cook a starch to go with my husband's dinner, but after about a month he was happy to go without and eats the same as me now. However, he does get through a ton of sugar in his tea and coffee and I keep a loaf of bread and a box of cereal in the house for him, which keep him out of ketosis. But he's very conscious now about avoiding all the junk food he used to eat. Don't know how much weight he's lost, but the skinny jeans that never fit him are falling off him now and he feels so much healthier.

    I wish I could get my dad to try it, he's diabetic and still doing the low fat high carb thing. I could probably cook low carb for us but when he goes about eating carby stuff otherwise the combination of high fat and high carb may be disastrous.

    But he's too old to care about changing his diet and eats whatever. According to him.

    Earlier in the week Anna and I went for a 5 mile walk and she couldn't hack it - 2 months ago she could. Rowdy had to come pick her up in the truck. It was a huge wake up call for her. Her knees, ankles, stamina are shot. She decided to try low carb. I'm so excited!! She doesn't want to weigh or measure - I got her this far, I'm not forcing anything!
