Picnic Food???

I'm going out on the boat this weekend. Will have cooler but no means to heat anything up. Ideas for a "picnic" lunch.

Tomato mozzarella salad w/ olive oil and balsamic would be nice. Meat and cheese roll-ups are another good option!4

Hard boiled eggs, salad with plenty of cold meat and cheese (pack whatever dressing separately), tuna, egg, or chicken salad, fresh berries, whatever kind of nuts you prefer, chopped veggies with some kind of full fat dip (I love dipping cucumber slices or bell pepper pieces in guacamole), and maybe some good dark chocolate for a sweet treat after your lunch.

For days like that, I'd just throw some cheeses and fatty lunch meats (salami comes to mind) into a cooler and call it good. Maybe some hard boiled eggs to mix things up.3

Turn those hard boiled eggs into deviled eggs or egg salad. Tuna salad, make some cheese crisps and pepperoni slices, whip up some heavy whipping cream, cream cheese with your choice of flavor for dessert. Cream cheese dip - my fav recipe includes adding Worcestershire, bacon or salami, shredded cheddar and green onions until you like the combo.4

Pre-wash some lettuce leaves, big thick romaine leaves and keep them whole. Store them in a zip lock bag with some paper towel. Make a chicken salad mix (chicken breast, mayo, salt/pepper, a little relish and celery) and store it in an air tight container in your cooler. Pack some sugar free jello snacks, pickles, almonds, cheese and toss those in your cooler as well to snack on. Take loads of ice water and maybe flavorings (crystal light or mio for ex).
When it's picnic time, unfold your romaine and scoop on the chicken salad onto the leaf, roll up and enjoy!1 -
Oh and if you have access to whole foods they have AWESOME parsnip chips that I highly recommend!2
