Spaghetti Squash Salad

Just got this recipe at a cooking class at the office - originally meant as a hot dish, but the instructor turned it into a salad instead. She did a vinaigrette with olive oil, and added Parmesan cheese and ground walnuts which was really delicious - but you can skip all that for a low-cal, veg only dish. Just mix all these together in whatever portions you like - add other veggies as desired!

Spaghetti squash (google how to cook in a microwave to get the threads)
Green onions
Shredded carrots
Bell pepper, julienned
Fresh basil (use lots - it's so good!)
White balsamic vinegar (regular will turn the dish brown)
Finely chopped garlic - one clove is about good for one squash

I've also been adding Shisito peppers and cherry tomatoes. Enjoy!

    I will try this. I have never done SS in the microwave but I have in the oven and I also just bought an instant pot which will be fast as well.

    I cook my spaghetti squash in my instant pot. Super easy peasy! This looks good...will try it this week!

    I slow cook my squash, add frozen peas, a tiny amount of chopped bacon and cream cheese. Sprinkle with parmesan cheese. You can modify to lessen calories with the amounts of cream cheese, bacon as needed. My whole family loves it.
