ROAD TRIP!

WHY I'M WAITING UNTIL NOW TO POST THIS IS BEYOND ME? heh.
So, I'm meeting the boyfriend's parents this weekend. He lives in WI. They live in AR. It's 10 1/2 hours without stops. We are leaving Friday night, arriving Saturday morning, staying until Monday afternoon. ROAD TRIP!
I'm overly neurotic about my eating. (I'm sure NONE of you can relate, right?) AND...we're both kinda broke. Bringing most of our food for the weekend! I need ideas for foods that will travel well in a cooler. We'll have one cooler in the car for the drive and a cooler in the trunk for the weekend.
In the car, I'm going to have:
Chicken salad made with greek dressing
Protein Bars
Mini peppers with Laughing Cow cheese
Popcorn (that Smart Pop light stuff) PORTIONED
Portioned cheese and salami
peanut butter crackers (for him)
For the weekend, I don't plan on having every meal covered, but the bulk:
2 rotisserie chickens, shredded
Steaks
hard boiled eggs
shakes
protein cereal
(his mom has a huge veggie garden, we're going to try and eat there or from farmer's markets)
Any ideas for other things? I'd rather overshop today than have to get more food later or from a gas station. Oh, and I can't do wheat. *smile*
And yes, I'm shopping today, so anyone online all day will be my new besties! lol

Freeze dried edamame
Jerky (if you find it on sale)
water + protein powder for shakes (I'd measure out the doses and put them in individual snack bags)
Almonds
cheese sticks + turkey pepperoni
s/f pudding cups
Just a few.
PS. Check the air pressure in your spare tire. They DO go flat over time.4 -
I think @anbrdr suggested everything I was going to. You could do cottage cheese or yogurt too. Portioned carrots or other veggies and a dip made with Greek yogurt. You could make egg muffins, like this: http://iowagirleats.com/2012/02/16/mini-ham-cheese-quinoa-cups/ or other combinations.

I traveled similar to this a while back, Snack size baggies are life! Portion out some almonds & cheese cubes, or string cheese and few berries (for sweet and fruit), Do Pb2 mix and some celery, or like mentioned before any dips made w/ greek yogurt and some portioned out veggies. I love, love, love sugar snap peas for something crunchy. You sound like you have a really good handle on your meals so far tho!
Have fun w/ the boyfriends family, enjoy yourself, and if you have to go outside of your normal routine, remember it is ok, it will not ruin all of your hard work, just make smart choices and really enjoy your experience!1 -

Heh, got that out of the way! I work with a local garage, brought it in for my oil change and they did a free "Road Trip inspection" including the spare tire, jack parts, and wheel lock (VW)! Thanks though!

Wait! Get this! THEY DON'T KNOW WE'RE COMING! LMAO! This is going to be a total surprise. I don't like surprises, so I'm ready for everything to crash down around us. We'll see. Food planning is hard enough. Driving 12-hours overnight. GAH! Showing up UNANNOUNCED FOR MOM'S BELATED BIRTHDAY? OMG. STRESS! lol This is SO far outside my comfort zone, but that's what this year has been for me! SHAKING THINGS UP!4 -

Talk about EXHAUSTED! I stayed up all night Thursday and went to bed at 9am on Friday. I slept until 5pm. Got to his house, had dinner and left at 8pm. We arrived in the area around 6am. Finally got to his parents around 11am. They were shocked as can be. We didn't get to sleep until 10pm. So, I was up from 5pm Friday until 10pm Saturday. We got up on Monday at 8am, left AR around 4:30pm, pulled into his driveway at 3am Tuesday. I slept on and off all day yesterday. I'm at work now and want to sleep. I guess I'm too old to adjust like I used to! lol
That being said, I had brought WAY too much food, lol! Those strawberry cookies @chubby_checkers posted are FANTASTIC and SO easy! I made a double batch, he didn't eat any, so I've been hoarding them!
Hard boiled eggs and a shredded rotisserie chicken really got us through, along with protein bars for breakfast.
Meeting the parents went well, but I'm not shocked by that. (If only you guys knew me, lmao, so not a confident person that comment is hilarious. I crack me up.)
Thanks for all the food help! I'd rather have been over prepped than end up with no food!4 -

Yeah. Well, not been on in almost a week. The day I posted it went great is the day he showed up and broke it off. Out of the blue. I've been dealing with that since. I have realized that eating is no longer a coping mechanism. So. Time to regroup, refocus and restart. The weekend was horrible food-wise. I don't think I got 1000 calories combined. Back to work means back to a schedule, back to "feedings", lol.
I'm good, please no "So sorry" messages. I yelled, screamed, cried, sobbed, bargained, all weekend. I'm dealing. It boils down to him being a man-child (my term) that needs to be mothered (his term). I'm incapable of raising a 37-year old man. As much as walking away hurts (he wants to be "best friends") it's what I have to do right now.0 -
Cannot say I blame you -- and you will be fine in time (though I know it sucks). You are a beautiful person inside and out and only deserve the best!2

Condolences for all of you in the dating pool. As an old married guy, it was hard enough 22 years ago, watching it these days is terrifying. As my kids enter that stage of their life, I shudder to think what they are in for.
