Tuna melt on tomato - my new favorite lunch!

Serving size: 2
1 can of chunk light tuna
single serving size of guacamole.
one pickle
6 banana peppers.
1/4 cup of reduced fat cheddar cheese OR 2 slice, Singles- Fat Free American Cheese
Mix the tuna and guacamole together. Cut the tomato in half, scoop out the insides. Split the tuna/guac mixture between the halves. Top with 3 banana pepper rings each, cut the pickle spear up (I get about 3 wedges on each), top each half with 1/8 of the cheese (or one slice of cheese)
Bake at 350 until hot and bubbly.
It is so so so flavourful.

If you like pizza:
1 - Joseph's flax, oat and whole wheat pita
2 TB marinara
1/4 c part skim
Shredded mozzarella
Top pita with sauce and cheese - bake at 350 for about 10 mins...delicious!0
