I just came up with an easy soup recipe That turned out great. Chorizo & Shrimp Soup. Only 6.4g Carbs (.5 fiber), 24.1g fat, 18.5g protein, & 312 calories per 10 oz. Serving. My recipes makes 10 servings, but it can be easily cut in half.

2-32 oz. Boxes of chicken stock
1 lb. Raw Shrimp, peeled, deveined, lg.chopped
14 oz pkg of mild chorizo sausage, sliced.
2 cans rotel type tomatoes
2 cans coconut milk
2 tsp Orrington Farms Ham Seasoning Base
1/2 Tbsp. Old Bay Seasoning
1 tsp Spanish Paprika
1 tsp dried parsley

Cook sliced chorizo in bottom of soup pot, add canned tomatoes, stir to deglase pan of brown bits. Add chicken stock, ham base, and spices. Simmer 10-15 minutes. Add shrimp, cook addition 2 minutes. Add coconut milk, heat through and serve. Hope y'all like it!
