Raw cacao beans

I have a package from my trip from the Dominican Republic, you have to peel and eat the bean. The only nutrition info I can find is for cacao nibs, which I think is the same thing, and it's 10 g carbs/9g fiber for one ounce. I certainly wouldn't be eating this much at one time, maybe 3-5 beans (I'll weigh it out to get an exact carb count). Does anyone ever eat raw cacao beans for the good fat and vitamin benefits? I think they are high in magnesium which would be great. Would also satisfy the chocolate cravings (I <3 chocolate) without needing a sweetener. Are the carbs in it worth it since it's 90% fiber, therefore minimal net carbs?

This article might answer some of your questions:

If the beans have been roasted they should be fine for nibbling on :)

I use raw cacao powder in my fat bombs. I'm a darker the better kind of chocolate gal. Can't stand milk chocolate at all. So cacao is my chocolate of choice now.

    Thanks.
I have a feeling this is my best chocolate option. May even experiment with making a fat bomb with some nibs in it for texture. Hmmmmm.... I love the creativity that low carb is bringing out in my cooking and baking skills.

I eat the nibs, usually mixed into almond butter. Have you looked into baker's chocolate? It's difficult to eat as a chocolate bar, but you could shave some off to use as a topping for a shake or whipped cream.

That's a good idea for the chocolate shavings. Would be pretty too

I like cacao nibs with macadamia nuts and almonds, and some coconut. My favourite night time snack.
