Keto Chicken Parmesan


Ingredients
4 chicken breasts (pounded and tenderized until flat)
2 cups crushed pork rinds
1 cup grated parmesan cheese
2 T Italian seasoning
4 small/med sized zucchinis
2 T garlic oil
1 t garlic salt
1 cup naturally low carb tomato sauce (mezetta or rao if you can find it)
1 cup mozzarella cheese
Directions:
 Preheat oven to 375 degrees
 Pound/tenderize chicken breasts
 In a plastic bag or container combine the pork rinds, parmesan cheese and Italian dressing
 Add chicken breasts to the bag and shake them until totally covered
 Place your coated chicken breasts on a baking sheet (I line the pan with aluminum foil and spray with cooking spray to make clean up easier)
 Sprinkle about ½ cup mozzarella cheese on each chicken breast
 Cook for 30-45 minutes
 Take your zucchini and zoodle them with a zoodler or shave them with a peeler
 Add garlic oil and garlic salt to zoodles and toss. Set aside
 When chicken breasts are done, remove from oven and plate
 Heat a pan to medium high, add oiled and salted zoodles
 Cook 1-2 minutes just enough to get them hot
 Add tomato sauce and cook only until hot
 Plate the zoodles with your chicken
 Use extra sauce in the pan to top your chicken
