Favorite Casseroles?

Hi All, with the cooler weather rolling in soon (I hope we get some in FL this year!) I'm wanting comfort foods and am searching for some really great LC casseroles. Do you have any favorites of your own?

Anything with cauliflower bacon and cheese. You can build anything you like with a cauli base. Add veggies, meats, various cheeses. A little HWC or broth... Just make sure you boil the cauli first so it's tender.

Agree with above. I found an awesome recipe with cauliflower. It was like a casserole and I used a hot link with it. O. M. G. So good! Gonna have to go find it for you.

Shepherds pie subbing mashed cauliflower is awesome too!

Also, I found a great Salisbury steak recipe, super easy and my whole family (4kids included) loved it!
