Kale - Help a girl out will ya? LOL

Ok so since I'm new to this I haven't really branched out in the veggie area as much as I would like. Trying to stick to the green leafy stuff, cauliflower, broccoli and brussel sprouts, etc. I'm getting a bit food bored with those so I grabbed some Kale yesterday.
Kale is something that I've never liked. But since starting this way of eating I have found that those things I didn't like before I actually DO like now. Weird huh? Anyway's, unfortunately Kale STILL tastes like dandelion weeds and dirt to me . I flat out spit it out yesterday tasting it raw and the only way I could choke it down was to toss it into a pan with some water, olive oil and seasoning and that made it tolerable.
Well I don't want to choke stuff down. That's not the point of this way of eating, right? So any recommendations out there on how to incorporate Kale into the mix? Or is it something that I just won't ever come to like and need to give the rest to my chickens?

The most important part is to make sure you pat them dry! I throw the raw pieces in a bowl and massage them with a bit of olive oil till they are covered, then put them out on the parchment paper on a cookie sheet, sprinkle with parmesan or just salt & pepper, bake. Watch carefully near the end of baking time so they do not get brown and bitter.5 -
I absolutely LOVE kale! You may find it more palatable cooked than raw, so two easy ways to do that are to chop it up and saute it with bacon and onions, or throw a couple handfuls of chopped kale into your favorite soup and let it cook for at least 20 minutes.
Basically, almost anything you can do with spinach you can also do with kale. Good luck experimenting!3 -
I really enjoy it cooked with some bacon fat and then add in the cooked bacon. I always cut out the stem though. That's just tough and nasty to me.
Kale chips are awesome. I like it with salt and garlic powder or as a special treat I'll add Parmesan sprinkled on.
A raw kale salad is really good to.

Kale chips are okay...
Otherwise I feel that kale should stick to being the green leafy stuff under the foods at a buffet table - just for show.
Besides, kale is too high of carb for me for a green leafy veggie that I don't like much.2 -
I would go ahead and try kale chips if you don't like kale in general. Tons of seasoning options!
But...if you hate it don't eat it. It is totally not required for sustaining a healthy lifestyle!0 -
Not a favourite at our house. Even the dog we are babysitting eats around it or spits it out if it is put in with his other veggies. But as chips, not bad.1

Kale chips are delish!! Make sure you strip the leafy bits off the stem. Hopefully you're buying whole leaves, it's easier to separate them from the stem that way. Here in Scotland I've only been able to buy it chopped, which isn't ideal for kale chips.
It's also really good in a salad, but the key is to massage the dressing into the leaves and let it sit for an hour or so to let the fibers soften.
I also love tossing it into soup. I make sausage soup with kale, turnips and mushrooms, it's my hubby's favourite.
Treating it like Brussels sprouts is good too, sauteeing with bacon lardons as mentioned above, super good!0 -
I've made this and both my husband and I enjoyed it. I didn't follow the recipe exactly. Less oil, less garlic, shorter cook time. With the onions, it may not fit your carb amount but here it is:

We have it as up to half of the lettuce portion of our salads with dinner.0

This is a 'thing' in our area.... go to any potluck or similar get-together and you will find it there. It is delicious, but of course dried cranberries and poppyseed dressing aren't exactly on plan. It could be MacGyver'ed if you make your own dressing with some sweetener and use unsweetened dried cranberries. I can eat a whole bag of this in one go .
