My lovely husband made corned beef and we have a lot of leftovers. I decided to make ruben-esk "sandwiches" and they were delicious!
I'm not a huge sauerkraut fan but I had some artichoke hearts I needed to use up and I figured they would be close for the sour flavor profile.
I put sliced corned beef in 2 small cabbage leaves with some artichoke hearts, crumbled feta cheese and classic yellow mustard. So tasty and I did not miss the bread one bit!
I've started a pintrest board to track keto recipes and ideas. I look forward to learning from this group!
