Thanksgiving snacks...

Since we're eating our rather basic Thanksgiving meal early (12:30ish) since my teenaged daughter has to work at 2 and I pulled a 12hrs shift last night, I wanted to make sure we'd have good snacks for the afternoon/early evening. This was the result:

I have a good full fat low-carb ranch dressing for dip for the veg, and some Ritz type crackers for those in my house who will eat them with the kielbasa, pepperoni and cheese.

    I made sausage balls to snack on...Sausage, a little sauteed onion, salt, pepper, an egg and some ground pork rinds to bind and sharp cheddar cheese. Those puppies are going into the oven soon!

    Have you tried making the sausage balls but covered with pork rind for the crunchiness or, boiled egg, sausage meat covering it and crunched pork rind covering it? It becomes like a scotch egg mmmm
